On A Whole New Way to Treat Yourself:

We played around with that tagline and that purpose a lot, and we would like to incorporate a lot more how-to on things for people to learn, so a lot of educational stuff, instead of just a recipe.

I think one of the big things that I wanted to do is bust through some of these food rumors, like what is really good for you versus what isn’t good for you at all. I know it seems oxymoronic,…I don’t know the right word…but ironically, even, because I do talk so much about desserts. But I’m very specific with the ingredients that I’ll use, and I would like to introduce produce and different flours, gluten-free options, just fun stuff like that into our everyday baking. So I really wanted to come at it from that angle and that approach. Sweetish to me, I wanted to create this online bakery, and bakeries don’t just have sweets, they have savory, too, incorporating that concept.

On Learning How to Bake:

The first dish I probably learned to bake were chocolate chip cookies. And my mom, she’s a really good cook, and my Grandma was a really good cook, and I just learned. I remember making pizza dough with my dad in the kitchen, just for fun, when I was little, six years old. And so we just were very much a family of food and always making things. And baking from scratch has just been a big part of my upbringing.

And then when I moved away for university, for college, I was like, “Okay, I’ve got to do this on my own.” That’s probably when I really fell in love with it even more because it was just me in the kitchen. I realized I could create all of these different things and started taking food science classes. I actually started working in a bakery. So it just escalated from there, really just wanting to learn.

On What it’s Like Baking Wedding Cakes:

Very terrifying, yes, very. I am not a culinary institute graduate. I learned from some amazing bakers at the bakeries I’ve worked at. But I felt very like, “Oh, my gosh. I don’t know how to do this.” So luckily the style of the cakes that they wanted were very much me, very, very simple and flowers here and there and different things like that, and they just wanted them to taste good and be pretty. So I’ve done freelance work like that. It’s super nerve-racking. The transportation of wedding cakes is the worst. It’s like, “Okay. Oh, my gosh. I forgot about this, and I forgot about having to drop them off somewhere.”

But that concept of just very simple, very, very simple and very homemade. Pretty, but very homemade, and that’s really the feeling I wanted to bring into Sweetish, very approachable, very homemade. There are some incredibly beautiful cakes and different things out there, and I’m just like, “Gosh, I’m so simple compared to that.” I really don’t want to hassle a lot with food or with baking. I want it to be easy, I want it to be really good, and I want to know what’s in my baked goods.

That approach was definitely taken into the wedding cakes. They didn’t have to do a bunch of sugar art or anything like that and just did really simple, beautiful.

On a Dish That is Special to Her:

There are so many. I don’t know if I will even ever post about this, but one dish that we used to make growing up… We have a lot of Danish heritage, and we called it cream eggs on toast. We would butter toast, we’d get really good bread, and we’d just toast it, and every kid would have a fun job in the kitchen for preparing this meal. And it probably sounds really gross, but it was really good. We’d tear toast up, and then my mom would make this cream sauce, like a Béchamel sauce. And then we would have hard boiled eggs, and you would mix the white part of the hard boiled eggs with the cream sauce. And then you’d pour it over these little pieces of buttered toast, and then you’d crumble the egg yolk on top. That was some sort of Danish thing that my Grandma would make. I don’t even know.

It was a super cheap dinner, but we loved dipping our little pieces of toast in this cream sauce with egg. Even now, it probably wouldn’t even be half as good, but it was just such a special memory that we were involved and making this special dish growing up. There are so many more that probably sound so much more appealing than that.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

I love Gordon Ramsay, his show. I’ve kind of been watching old shows, though.  I love Cooked…That’s a documentary series…and Chef’s Table on Netflix, both of those. And then anything that has to do with Barefoot Contessa I watch all the time. Those are probably my top ones.

What are some food blogs or food websites we have to know about?

There are so many. There are a few that I have been obsessed with lately. I love Sprouted Kitchen. She’s probably my favorite blogger out there, and I’ve read her blog probably the longest. I love With Food And Love, I love Sherrie, what she’s doing…and I love Heartbeet Kitchen. That’s another one. She just has beautiful photography. You can just feel her sunshine through her posts. I love Hummingbird High. I think she does awesome bakery goods stuff, and I love what she’s doing. There are a bazillion.

Who do you follow on Pinterest, Instagram, Facebook or Snapchat that make you happy?

I follow probably more people on Instagram than anything else. I love following Apartment Therapy for different things for kitchen ideas because I dream of having an amazing kitchen some day. I love Hey, Sweet Pea. They’re really fun and inspirational, and they’re a husband/wife team that have started their own business. They started the branding program that I had mentioned previously, so they’re super inspiring.

What is the most unusual or treasured item in your kitchen?

I’ll go with unusual. I bought this super weird pie rack…I wish I could show it to you…but it looks like chicken coop circles. And I guess it was something that they used to cool pies on, and it looks like an empty wired cake pan. You’re supposed to put a pie to cool on top and then a pie to cool on the middle. I saw it at this cool store up in northern California, and I was like, “What is that?” They told me it was a pie cooling rack. So I don’t even know if it really is, but I had my eyes on it.

Name one ingredient you used to dislike but now you love.

Raw onions. I used to hate raw onions, and now I like them. If I’m putting them in sauces and stuff or dressings, it can’t be a ton, but I definitely have learned to like them more.

What are a few cookbooks that make your life better?

Barefoot Contessa at Home, it’s  one of my favorite cookbooks ever. I love Huckleberry. That’s one of my favorite cookbooks. The Violet Bakery Cookbook. I love her stuff. Those are some good ones.

Barefoot Contessa, the original cookbook, is one of my favorite cookbooks of all time. That is the cookbook that got me cooking.

What song or album just makes you want to cook?

I love listening to the Lumineers. They’re my favorite. And then I love listening to The Black Keys, and sometimes I’ll put on The Beach Boys. That’s fun and upbeat to listen to. Those three are probably my favorite.

Edlyn restarted her blog when she moved from Goa, India, to the U.S. in 2012. She is greatly influenced by the way her family approaches food and the way they cook. And though she is not a professional cook, she likes believing that she is.

On Her Blog:

It was about so many random things. I was really young. So picture that, picture like a young person’s journal with, “Oh, look. Look what I did today.” So it was kind of like Instagram but on a blog.

I think the fact that I had that space, not doing anything with it, when I moved here, I couldn’t work for, I think, a year almost, because I was getting my paperwork done and everything. So I was spending so much time at home, and I was getting kind of depressed even. I just needed to channel that energy into something creative, because that’s what I knew how to do.

Also, I was really hungry a lot, so first, I have to make breakfast. Now, what do I do? Okay. Then I make lunch. I used to go online and look for more American things, because I was afraid I wouldn’t find ingredients that I was used to back home. So I started reading The Pioneer Woman Cooks. I really enjoyed her writing style. My eating habits have changed a lot, so I don’t really cook from her blog, but I still really enjoy reading her writing. And then I figured it out from there.

If you read my blog, I try not to write too much about food when I do the writing part of it. I try to keep that still as a journal. That helps me keep in touch with my family back home, because I’m not really an open person. I find it hard to express myself just talking to people. So writing is that outlet for me and that’s the way I get to communicate with people like, “This is how I’m feeling right now. Leave me alone.”

On Growing Up in Goa, India and the Role of Food:

Oh, it played a huge role. I was listening to a podcast, I think your podcast, and the lady was saying how food was something people cooked every day, and eating out is like a luxury almost, it’s like for special occasions. That’s exactly how it was. I don’t think we really missed eating out as much. It was a huge task for my parents to do, cook every day. But now that I’m grown up, I kind of understand how much work it took and it makes me appreciate that. So, yeah, food is huge there.

On Her Curiosity Around Cooking:

My dad is the primary cook in our family. My mother likes cooking, but my dad is much quicker and I think he enjoys the process more than she does. For her, it’s like, “Oh, it’s a chore sometimes,” but he loves it. But he also doesn’t like having other people interrupt. He’d always yell at us, “Go away.” So we watched. We would just watch and try and help but.

I wasn’t really interested because of that. I always thought it was something negative maybe. But I also enjoy watching, smelling everything. But I only started doing it myself once I moved here.

On Learning How to Cook:

I don’t think I’ve ever cooked anything with their direction, but just watching them and kind of seeing how things looked. As a kid, I’m just watching the onions brown and exactly when you add the tomatoes after and all those spices that you add one after the other. I kind of put those smells together more than anything else, I guess.

Like I was saying, I only started once I moved here. So it was just me feeding myself and my husband, that’s why I moved here. He’s a good cook too, but a lot of his dishes are pretty standard. He likes making a good steak or a good burger and I can’t eat like that. I need different elements on my plate sometimes. So, I encourage myself to add more flavors to our meals. That’s basically what motivates me.

On the Food Culture in Goa:

Things changed once the Indian economy opened up and more foreign products and packaged foods started coming in. So things kind of changed a bit, it became easier to cook at home. And people also wanted to experiment more with other cuisines and that’s where restaurants came in.

So growing up, yes. I don’t think we used to go out. Maybe one birthday or just for fun. But it’s changed a lot now. People go out more as, “Oh, we’re bored. Let’s do something.” And that would mean going out.

On a Traditional Goan Meal:

The staple in Goa is fish curry and rice. That’s one of the staples that you have to try. So the first thing you would need is coconut, because that’s what most of our curries are based, kind of like Thai cooking. But we use fresh coconut and other spices that have a very orange color. So turmeric, coriander seeds, cumin seeds, tamarind, and just whatever fish is fresh that day.

I would say fish curry or shrimp curry. They basically use whatever fish or seafood is fresh or whatever they want to add to it. But, yeah, that would be the first thing I would recommend, fish curry rice.

I don’t know if you’ve heard of A Brown Table, Nik. He does a lot of Goan-influenced food. It’s really delicious. So if you do want to learn a little bit more about Goan food, because I think he’s half-Goan and half-North Indian, I think, but he makes really good recipes with Goan food. And other more traditional recipes, there are a lot of home cooks and food bloggers that aren’t as popular as bloggers that we read every day, and they may not have the best photography, but they still have really good recipes. So if you just type “Goan food,” (in Google) the top three websites will always pop up.

On How Her Cooking Has Changed Since Moving to the US:

I think it has changed more so because in the beginning, I used to get really swayed by, “Oh, look at these healthy food bloggers, they eat so well.” And I kind of got pulled in that direction, like that was the only way to do things. But over the past few years since I’ve moved here, I realized that that’s an unhealthy way sometimes to cook if you don’t lead that lifestyle.

So over time, I started cooking more food that makes me happy and nourishes me as well. So I won’t shy away from making mac and cheese just because I like it. So what’s wrong with eating it? So my thinking has changed in that way and I’m happy about that.

On Goan Food in the US:

Pretty much everything is not the same, but Goan food is really hard to find in this part of the country, I think. I never get to eat anything from home unless I make it myself. But the North Indian foods and the South Indian foods, the dosa and the chicken tandoori, that’s really popular here. And I think the restaurants do a good job, but I can’t say for sure, because I don’t live in those parts, so.

Which food shows or cooking shows do you watch?

Lately, I’ve been watching, it’s a PBS show called, Mind Of A Chef, and it’s all on my Netflix that I have.

What are some food blogs or food websites we have to know about?

If I had to pick a few, my first one would be Hungry and Excited and she needs to get her blog back up. Hi, Revati, do it. Okay. And my other favorites are, which I do enjoy for the writing, is Orangette. Also, I like Oh, Ladycakes, just because she swears a lot and she writes really good recipes. I like that, I like her honesty. And a blog that I can always immediately cook from is Sprouted Kitchen. She always uses ingredients that I know I always have. Those are my basics that I like a lot.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

Instagram I like following Cats of Instagram. I like looking at cat pictures. They’re so funny. I do follow a lot of food people on Instagram too, but I enjoy looking more at animals — cats, dogs. Another one is, I think it’s called This Wild Idea, where he takes his dog and he puts her on random surfaces. I don’t know if you’ve seen that one.

What is the most unusual or treasured item in your kitchen?

My most treasured item would be my tea strainer. I’ve been wanting to own a tea strainer for the longest time, because when I make tea, I like to make it of loose leaf tea. So, yes, that is my most treasured item. And unusual would be a coconut scraper that it’s not a traditional scraper and sometimes I feel like I’m gonna scrape my palm off when I use it, but yeah, maybe that.

Name one ingredient you used to dislike but now you love.

I used to really hate cardamom a lot, because whenever we would eat it in food in India, it would always be in a rice dish and it would be the whole cardamom. So when you’re eating it, you bite into it and it used to be a very unsavory taste. But now, I know that you can grind it into dust and use it in baking dishes. I like it a lot more now.

What are a few cookbooks that make your life better?

I don’t really read a lot of cookbooks, sadly. I do have a few that I own that I go back to every now and then. I like The Baking Bible, and the new Sprouted Kitchen cookbook is one of my favorites that I keep going back to every time I need to look up something or just look at beautiful photographs. Her husband takes really beautiful photographs.

What song or album just makes you want to cook?

Lately I’ve been listening to M.I.A. I thinks it’s her Kala album.

On Starting Her Blog:

I’d say it was just a matter of wanting to continually be inspired by new recipes or new ingredients. It helps me keep things interesting and that way I’m looking at new cookbooks, new recipes online and trying different ingredients.

I’m always inspired by seasonal ingredients, as well. So, the blog is really just a vehicle for me to constantly come up with new things for dinner and for breakfast. That way food’s not boring.

On Her Interest in Food and Cooking:

I’ve had a long-time interest in food and cooking.

I started cooking at a young age, just helping my mom in the kitchen. So, it probably stems from that good foundation that she built and instilled in me. And then, I got a lot more into it in college and high school.  I really started to get into nutrition and thinking about how the food we eat affects how we feel and our bodies. So, that really is what, kind of, jump-started my interest in cooking. Through that, I’ve discovered how food actually made me feel. And through that, I found out I was gluten and dairy intolerant. So, it’s just been a journey.

When I moved to California, this “California fresh” fare was really inspiring to me. I come from the Midwest; I’m from Minnesota. And not that we didn’t eat healthy growing up, but it wasn’t quite the same cuisine. So, in college in California, I really started to use fresh produce and make that the foundation of my meal. Since that was something that was relatively new to me, it really inspired me to find new recipes.

Finding food blogs was also an inspiration to me, as a source for new recipes.

What else inspires me is just the food that makes me feel good. I try to eat food that’s healthy, but also tastes delicious. I definitely wouldn’t say I only eat for nutrition. Sure, that’s my basis, but it also has to taste good, because I also really enjoy eating.

What pushes me further is the fact that I have some dietary restrictions. And so, I have to constantly be creative and be adapting recipes to make it something that I can eat that’s not going to hurt my stomach.

On Experimenting in the Kitchen:

I’d say I’m a creative or curious cook. I just throw things together. I don’t have too many total flops, but that’s because I love adapting recipes that I know work. Or, I just throw things together that are super simple, like oatmeal or an egg bake. There’s a lot of really simple foundations that you can build on to make something healthy and delicious. I’ve definitely had major flops, though. Especially in baking. There’s trial and error, for sure.

I think if you find recipes that you like, just try swapping out an ingredient. Like, having that curiosity. If you switch vegetables in a dish, that’s a pretty safe swap. Just start experimenting. If you add additional spices, that’s a pretty easy way to explore. Baking it’s a little harder. But for cooking, it should be fun and it should be kind of an experiment.

Just having the curiosity of “What happens if I add these spices?”, or you switch up the vegetable or you switch up the meat. Don’t feel like you have to have exactly what’s in the recipe, unless that’s exactly what you want to eat.

I think I look a lot to the online community. There’s so many people doing really amazing things. So, I’m continually inspired by other food bloggers. I have a lot of cookbooks and I cook from a lot of them here and there, but I don’t have one in particular that really inspires me.

On Some Good Resources for Learning to Cook:

I am a 100 percent self-taught cook in the sense that I never really looked up the science behind cooking or baking. I think you learn that over time. So, I don’t think that I went to one resource. 101 Cookbooks, Heidi Swanson was definitely a first food blog that I found. Sara Forte from Sprouted Kitchen was another one.

On Being a Holistic Nutrition Consultant:

I had considered, in college, going to school for nutrition but decided to go to school for business, but I found this holistic nutrition school in Berkeley, California which is where I live now. And so, I kind of made it my plan: “Alright, I’m already in California. After I graduate I’m going to move to Berkeley and do this program.” It took me a few years, but eventually, I signed up to do the holistic nutrition program. It really just stemmed from curiosity of how food affects our bodies and how you heal yourself from the inside out, through food.

I think it’s pretty baffling to me that people don’t have the connection between what you eat and how your body feels. So, for me, it was really just to get that information. I’m a total food science nerd, so I love learning about how what we eat affects our body and then how that affects how you feel. It really is a holistic approach how that affects the rest of your life.

There’s definitely a balance between healthy and food that makes you happy. It’s easy to go too far one way or the other, and finding a balance is really a personal preference. It’s different for everyone. For me, I definitely feel better when I eat a lot of vegetables, but I also love sweets. So, oats with maple syrup is one thing; that, even to me, is enough.

Sometimes I really want dark chocolate and I’m not going to deny myself that. So, it’s definitely different for everyone. That’s my overall philosophy: every single person has a different diet that’s right for them, and food should make you happy. It should be something that you look forward to eating, but it also should be nutrient-rich. It should be something that’s not going to eventually, down the road, make you sick.

I think that is the first question you get asked and it’s the hardest question to answer; is “What should I eat?”. Because it is so individualized. It is fun to navigate that path with people; to help them understand foods they like and foods they don’t like.

If you really hate peas, then there’s no reason to eat them. If you really hate beets…I personally hate beets. It’s really hard for me to want to cook them and eat them. Just because it’s healthy, doesn’t mean you have to eat it. You should definitely find things that you want to be eating that are also healthy.

Which food shows or cooking shows do you watch?

I don’t watch any. I have a television, I rarely use it.

What are some food blogs or food websites we have to know about?

Ones that I frequently visit and actually cook from are: Sprouted Kitchen, it’s one of my favorites.

Cookie and Kate, that’s a really good one, I’ve cooked a lot of delicious things from her site.

A Couple Cooks, they have a lot of really good recipes.

Dolly and Oatmeal, she’s also gluten and dairy free, so I always love her recipes.

Who do you follow on Pinterest, Instagram, or Facebook that make you happy?

I’d say Instagram’s probably my favorite platform, just because I love to look at photography. I actually follow a lot of photographers and travel or portrait photographers on Instagram. I follow the food blog world, too, but those are the pictures that make me happiest. It’s just seeing other parts of the world and little snippits. If you’ve had a rough day and you’re feeling uninspired, it’s so nice to see these beautiful nature landscapes.

One that comes to the top of my head is Jeff Marsh. He’s a Seattle photographer, both portrait and outdoor nature photos. Beautiful, beautiful photos. Aubrie Pick, she is a local San Francisco food photographer; just amazing stuff. Oh, I recently met a photographer from Vancouver Island, Kelly Brown; she’s a wedding photographer and lifestyle. Really beautiful stuff.

What is the most unusual or treasured item in your kitchen?

I don’t think I have anything too unusual, but I have to admit, my most treasured thing right now is my Vitamix. I use it every day.

Name one ingredient you used to dislike but now you love.

Probably, snap peas. I really like them and can eat them raw now. And bell peppers. I kind of have a love hate relationship with them. I’m learning to like green beans; still not my favorite.

What are a few cookbooks that make your life better?

Recently, I’ve been returning to Vegetable Literacy by Deborah Madison; I love that one. The new Sprouted Kitchen cookbook just came out, that’s a really great one and her previous cookbook is excellent. I’ve also been cooking a lot lately from Vibrant Food, which is Kimberly Hasselbrink’s cookbook.

What song or album just makes you want to cook?

I love music. I went to school for music business, so music is a big part of my life. I couldn’t just pick one, but I always go to Motown or old soul or funk music in the kitchen. It’s just fun, upbeat, and inspires you. Right now, I’ve been listening a lot to Brandi Carlile’s new album, The Firewatcher’s Daughter; that’s a great one. So, a big mix.

A Thought for Food

Brian is a Boston-based food photographer, and on his blog, he shares a lot of vegetarian options, and considers his diet 98% pescetarian. A Thought for Food was started in 2009 and has been featured in Food and Wine, Food52 and Yahoo Food, just to name a few.

I am so happy to have Brian Samuels of A Thought for Food, here on the show today.

On Blogging:

I think to have a successful food blog, you have to be pretty dedicated. It’s very time consuming, so I think maybe not crazy is the right word exactly, but definitely devotion, passion, maybe a little obsessive. Maybe that’s a better term. That’s really why I think a lot of people who end up writing food blogs have that type of personality.

I would say the most challenging would be the writing of it. I don’t find myself to be a natural writer. I don’t easily sit down and the words flow out. There’s a lot of editing involved. And sometimes I’ll write and write and write, and then delete a huge amount of it. Then, sometimes, I’ll just delete the whole thing and start over again. It takes a while.

There are other times, though, where I sit down and it does flow out a little bit more and I feel like I do have something to say and then it’s a little easier to say it. But for me, the most fun and definitely challenging element, but still the most fun and easy in a way, would be photography. It’s something that I’ve always connected to, just being able to capture my own experiences through the lens.

Back in 2009, when I started the blog, it was, I guess, the start of when food blogs became really big. There were definitely the big ones, like, 101 Cookbooks, Smitten Kitchen, and a few other big ones. I read frequently and I was always creating the recipes and commenting on those posts.

I felt like I also had a story to tell about food, and I was throwing a lot of dinner parties with my husband, or my now husband. I wanted to share those recipes and I wasn’t necessarily expecting people to read the blog. I was just sending it out to family members and friends who asked for the recipes. But I just really felt like I had a passion for food, and it was a way for me to get that story out there.

On His Curiosity for Food and Cooking:

I think ever since I was little, I was always passionate about cooking and showed an interest in it. I remember growing up and my mom making dinner every night. She was very much into making home cooked meals. We had take-out once in a while, but for the most part, she really wanted to make things from scratch and educated us about food.

She worked with a lot of cookbooks herself, in terms of making dinners for us, making meals for us. I just always took interest. As soon as I smelled something, I was always by her side asking questions and wanting to know how she was doing things. And eventually, she had me help her out.

On Getting Into Food Photography:

I went to film school at Emerson College in Boston. And there, I focused on documentary film-making, and I really fell in love with being able to tell stories, especially through film, but about the real world, about real people and not necessarily scripted.

I ended up working for a documentary production company in Boston for three years. And that’s actually when I started the blog, was during that time.

I did see it as a way to combine my love for documenting, not necessarily through photography but just documenting my love for food, recipe development, playing around with recipes, and educating people about food, all that. So it wasn’t necessarily about the photography specifically at the time, but definitely about documenting it.

I was shooting originally, if you go back to old posts, not that I necessarily promote that, I was using a Canon PowerShot, just point and shoot. Taking pictures of the final dishes and maybe a few processed shots along the way. But I wasn’t using great equipment; I was still learning about techniques about how to photograph food. My passion for food photography developed because of that experimentation.

On Being (98%) Pescetarian:

A pescetarian is someone who eats vegetarian and fish. Red meat is out, poultry is out. Basically any land animals are out.

When I was 15, just for health reasons, I decided that I really wanted to cut out red meat from my diet. And I was still eating chicken and turkey, but I really wanted to cut out red meat from my diet. From there, I took out chicken as well. But I could never give up fish or dairy, because I’m just in love with those two things. And I think it allows me to be a little bit more adventurous in my eating, in terms of dining out and experiencing things.

For me, that’s such a huge part of my life, is not passing up the opportunity to try something. So the 98% is really where I will usually have a bite of something if we’re dining out somewhere and it’s really special.

My husband eats meat, so he’ll most likely get a meat dish when we’re dining out. I’ll sometimes have a bite of that. And I still think meat is delicious. He loves making smoked brisket and I’ll have a bite when he’s done, just to try it out. Because I usually help him out a little bit too. So I feel like if I’m doing it, I want to know what it tastes like.

For me, it’s really about where you’re sourcing your ingredients. I make sure that what we’re cooking is locally sourced if at all possible. And I’m knowing the farmers that we’re sourcing it from and all of that. We don’t do it often. I can justify it.

On Cooking Fish:

I think salmon is hard to mess up. It’s fatty.

It’s funny because a lot of people stay away from salmon because they don’t like fishy fish. I never get that because I love fish, and I love it whether or not it has a fishy taste to it. I’m okay with that.

I think they’re getting that from the oils and the fats from the fish probably, and especially with salmon. But in terms of fish that’s hard to mess up, I think that salmon is really easy to work with. It also holds up when you add a lot of flavor to it, so you could do soy sauce, you could do a marinate with it and you’ll still have a really nice fish flavor with it.

I think that some other fish are more delicate obviously. White fish, you don’t want to mess around with that too much, so you have to be careful with that. I always think salmon is really easy to work with. I think sword fish as well. It holds up nicely. They’re both very meaty fish too.

I would not say I’m a pro at cooking fish at this point. I think I have learnt that overcooked fish is not merely as delicious as seared fish. And, so with salmon, I’m trying to make sure that the skin is crispy if it still has a skin on it. That it is cooked all the way through but not overdone. I think working with high heat is really key with fish because you just want that point where it just cooks all the way through and you’re not cooking any longer.

Starting off with high heat is really key. It really depends on the fish and what you’re doing with it and how you’re serving it. I also like to play around with other types of sea foods like scallops and shrimps and we’ll rotate that in our diet as well.

On Choosing Fish:

When I go to buy fish in the store I don’t necessarily care if it’s previously frozen or not, I really look at where it’s being sourced from. With anything I want to buy as local as possible. And coming from New England or, the Pacific Northwest, you can usually find local seafood in these areas but I know that people in the middle of the country struggle with that.

I’m really looking for stuff that, I can have a dialogue with the person at the fish counter and say, when did this come in? Where did it come from? Tell me about it? I think when it came in is usually a good sign of freshness, and yes, that’s pretty much my thought process behind it.

I think the frozen element really makes a difference because as soon as it hits the cold it’s obviously going to preserve it longer.  It depends on the fish. Yes the previously frozen thing doesn’t bother me as much as the farmed versus wild caught. If it’s frozen and it tastes good then, great. I don’t think it matters either way necessarily. I don’t think it affects the flavor of it too much.

Here in New England I’ve had the luxury of being able to get fish that was caught that day and having it and there’s a deeper flavor in it. You’re tasting the ocean. It hasn’t lost that flavor. I think a fish that has probably been frozen, it sort of loses that depth.

What are some food blogs or food websites we have to know about?

I think most people already know these sites but some of my favorites are Sprouted Kitchen and Happy Yolks is a favorite of mine as well, and Not Without Salt is one of my all times favorites. I think Ashley was on your show actually at one point.

Those are definitely some of my top three.

Who do you follow on Pinterest, Instagram, or Facebook that make you happy?

All those people definitely. Is it sad that West Elm makes me really happy when I see those pictures?

I’m a sucker for, we have a new house, I follow them just to see what they are posting about. So that always makes me happy. I would definitely say Ottolenghi’s Instagram feed always, I’m always unbored with that and Local Milk is a favorite as well.

What is the most unusual or treasured item in your kitchen?

This is a tough one. It’s funny, the weird one that popped into my head is an egg slicer. I don’t know why and I don’t think I have a connection to it really but it just popped into my head.

I don’t think it’s one of those things that people have but I actually use it fairly frequently. Whenever I want to do a big salad for one of my big weeknight meals. If I want a hearty salad. I always put hard boiled egg on it and it’s just an egg slicer. So I’m saying the egg slicer.

Name one ingredient you used to dislike but now you love.

Mushrooms. I think would be the one. I was such an adventurous eater growing up but mushrooms, I was disgusted by and now I’m obsessed with them.

I think for the most part we always had it with chicken, in a chicken dish. Or it was on top of pizza. My sister loved it and I think I just hated it because she loved it so much. But I’m obsessed with it now.

What are a few cookbooks that make your life better?

For the most part I look at cookbooks for the pictures to give me inspiration. Recently, the ones would be definitely Plenty. All the Ottolenghi books, I’m always going back to them. Ashley’s book, Not Without Salt’s, Date Night In I’ve been going to too.

I think the same goes for magazines as well. I subscribe to a lot food magazines and usually I go through for the pictures. I love the new Sift magazine by King Arthur Flour. Great pictures and it just gets you thinking, because it’s so baking focused, it gets you thinking outside the box.

What song or album just makes you want to cook?

Van Morrison’s Astral Weeks or Norah Jones’s Come Away With Me. When I’m cooking, for the most part, I want that chill music with a glass of wine and it mellows me out.

On Bev Cooks, Bev is extremely open about food and family. She’s a mother of twins, Will and Natalie, who’ve been featured on the blog even before they were born, and she claims to dish out the worst parenting advice you’ll ever hear. Bev’s high energy and wit makes me chuckle more than usual.

On Leaving Her Job to Pursue Her Passion:

I was stagnant, I was in a stagnant place and not really knowing where to go.

I was working and it was fine, but it took a long time for us to get pregnant and have our kids. So that stress and just not being super happy with my life direction, we got to this point in Aaron’s career where we looked at our life and it was like, “I think I’ll stay home. I just want to garden and hang out. Just kind of breathe and take some of the stress off of myself, and the pressure off of myself.” Once I did, I was like, “Okay, I’m home. I want to start a blog.”

I’m very inspired by other bloggers and stories out there. So it was shortly after I quit that I started, actually bought the domain. I had started posting photos of my dinners on Tumblr and Facebook, but it was right after I quit my job that I bought the Bev Cooks domain and really made it a blog. So I don’t know if you’d call it confidence or stupidity.

I was just getting more and more into the whole thing about food photography and writing. I mean, it was a mess, it was a disaster back in the early days. But time goes on and you hone your craft.

On Her Blog:

I’ve read magazines like everybody. I didn’t really pay attention to the styling of food until I started blogging. I was like, I know this doesn’t look right. This pork looks funny. I don’t know how to do this.

So, like everybody, I would just study magazines like Real Simple because I don’t want a ton of stuff in my photos. I just like it clean and white, and the focus is not a load of good scenery. I think that’s beautiful but I also just want to keep it clean. So I would just study magazines like Real Simple and things like that and kind of maybe rip them off. No, I don’t know. Inspiration, just like literally looking at them going, “Now, this is the way they have this.” “That works. Okay, ding ding.”

On Cooking as a Parent:

I want them to eat everything, and they have been eating… I make them kale omelettes every single morning, I don’t know why. It’s really easy. I mean, it sounds super fancy but it’s not. It’s an egg and kale and a little bit of the tomatoes and done. Cut it up in little squares and they love it.

I just want them to be exposed to everything that I’m making right now so that the hope is that they’re not going to be picky eaters. Now I will say, Will, he’ll touch a third of it and Natalie eats 100%. She does not care, she just eats it all.

But I haven’t really changed that much in my style of cooking because I just want them to eat it too. I cut up everything or separate some things from the others and cut up the pasta, to where it’s tiny. Make it easy for them to eat but I want them to have all the flavors.

During the weekdays, sometimes can be hard. Oftentimes I do simple, simple stuff like peanut butter toast, some torn up deli chicken and a cut up fruit or a tomato. It’s just a hodge podge of things, but I always love to have leftovers from what I’ve made either for dinner or the blog,  and then just give them that too.

They need to eat constantly. I’m floating from the kitchen to their high chairs, every two hours, your snacks, here, do you want it over here? Do you want it on the top of the roof? I don’t know. They have mouths.

On Her Column on The FN Dish Blog:

I’m starting a monthly column with the Food Network. On their FN Dish blog which is on their main landing page, but I will be streamlining kids only meals, like the first part of the recipe will be kid friendly, the second part of the recipe will be fit for adults.

So take like a pasta with marinara. Most of the time you’d stop there for the babies, for your kids, and give them the pasta and the marinara and have them go at it. Then for the adults you would add the olives, and the anchovies. So I’ll be starting that.

The favorite dish that’s easiest, I love pasta dishes. If they’re shells, then that makes it easier for them to grab, like shells with shredded chicken in it. I try to avoid giving them too much sauce because the sauce gets everywhere. So I try to remove as much sauce as possible.

What I really like to make for them is just two whole wheat tortillas, and just chop up some chicken and sprinkle in some black beans and a little bit of grated cheese. Pop that in a microwave for 30 seconds, and then just cut it with a pizza cutter. So they’re having little burrito squares.

On Getting Back into Cooking Since Becoming a Parent:

I would say because it is my job I knew I had to do it. It was about four weeks in. I remember four weeks in, and they were a month old. I thought, “I’ve got to start cooking again, or I’m going to go crazy.”

I just got back in, It really wasn’t that hard. In the early stages, what you have going for you with infants, just any infant, two or multiples of one, they sleep all the time. So it’s so easy while they’re napping for their seven hours straight. I’m in there cooking, and then plan it where you know they’re going to be napping and you could go in and cook and do whatever you need to do. If you need to cook it early in the day and warm it up in the evening, great. Do what works. Just do what works.

Now is a different story. They’re down to, most of the time one nap a day, and if I haven’t gotten my work done by the time they’re up and they’re running around… They’re full on toddlers now, and that can get a little bit challenging but we make it work.

America’s Test Kitchen. Martha’s Cooking School, I do watch that.

What are some food blogs or food websites we have to know about?

I love the Sprouted Kitchen with all my heart. I love Sarah and Hugh so much, it’s ridiculous. Of course, I love How Sweet It Is, Jessica’s a dear friend of mine. My New Roots, fantastic beautiful photography, Sarah Britton is just brilliant.

Who do you follow on Pinterest, Instagram, or Facebook that make you happy?

Instagram, all the way. Local Milk on Instagram. It’s just crazy, I just want to cry all over. Sunday Suppers, feeds like that. Feeds that have to do not necessarily with food, food could be in it but a slow approach to life, lifestyle.

Beautiful composition and everything has a certain shadowy moody, feel or bright. That’s what I’m drawn to.

What is the most unusual or treasured item in your kitchen?

Well, I have a cutting board that my husband made for me. He’s crazy talented with DIY. He’s a maker as you would maybe call him. He went to a reclaimed lumber place and got a piece of wood, I think it’s elm. I want to say it’s elm. And sanded it way down and made it food friendly, oiled it up and it’s just this rustic dark piece of beauty that I chop carrots, onions, and garlic on every day.

Name one ingredient you used to dislike but now you love.

I used to hate fennel. I hate black licorice, I absolutely hate it, but for some weird reason, I can dig some fennel.

The licorice-y flavor is definitely there, but it’s masked by its delicateness.

What are a few cookbooks that have made your life better?

Okay, I have this cookbook called The Silver Steam that my mom gave me for Christmas many years ago. I have Mastering the Art of French Cooking, Julia Child. Not that I have made my way through it like Julie and Julia, and don’t ever plan to. But I have cooked a few things from that book, and her approach and her writing – it’s so different than modern cookbooks.

Everyday Food, the Martha publication. They put out a cookbook along, long, long time ago and that’s when I first got into cooking. It was about 10 years ago when this cookbook was released. It opened my eyes to chopping, dicing, sauteing, everything. It was just enlightening.

I used to be really into Jamie Oliver a long time ago, into his early cookbooks. I loved that.

What song or album just makes you want to cook?

Well, I love Fleetwood Mac, Rumours. You cannot go wrong with that album. I don’t know if it makes me want to cook, it makes me want to do everything. I love that record. I can just put it on and cook at the same time.

The Bird and the Bee is also another band but just their songs and the production. The approach to their production is very unique. Lots of layered vocals, it’s really beautiful, but cool. It’s poppy, little indie-rock and that just makes me dance in the kitchen.

What’s Cooking Good Looking, food blog.

Jodi is a natural food chef. On her blog, she features healthy, wholesome and tasty foods that are proven to have the power to make us feel good from the inside out. What’s Cooking Good Looking was a finalist for Best Cooking Blog in Saveur’s 2014 Best Food Blog Awards.

More recently, Jodi is a finalist in the 2015 Saveur Blog Awards for Most Delicious Food, and she collaborated on a cookbook called Grains as Mains.

I am so thrilled to have Jodi Moreno of What’s Cooking Good Looking here on the show.

On Starting Her Blog:

I was somebody who always loved cooking. I grew up in an Italian family where food was very important. Food is always a very important part of our family. However, I wasn’t really always allowed to take over in the kitchen. I was always there helping and doing things.

When I went to college, I realized that when I didn’t have my family cooking for me anymore, I was going to have to cook for myself. So I started getting my feet wet with cooking. I was terrible. I made many, many mistakes. I exploded a few things.

When I started working professionally after college, I started taking it more seriously.

After work every day, I would come home and cook 3-hour meals for just myself. These elaborate things. I try these crazy recipes and then I bring the leftovers into the office. My co-workers were like, “Why don’t you do this? Why are you working in an office?”

After several years, I realized that maybe I should just do this full-time. So after a few years of working up to that, I left my job and went to culinary school.

On Photography:

My first job was working for photographers, so I never even had that much experience behind the camera. A lot of the work I was doing was in post-production and scanning the film into the computer, so it was a huge jump.

The photographer that I worked for really believed in me and thought that I could get behind the camera and start taking pictures. So he bought me a camera and it sat in my closet for many years, which I think I mention on my blog that it just kind of sat there collecting dust. It literally did.

Then when I went to culinary school, it was when I really started picking it up and taking it out, and realized since I have this love for food and this background of photography, I feel like it came naturally to just pick up the camera and start taking pictures of my food.

If you see my early pictures though, they’ve come a long way, so it wasn’t like they started off so great. But I did have a lot of background in photography which led me to where I am now.

On Her Shift to More Wholesome Foods:

I think it was a gradual process. I’ve always had this love of food but I also was someone who liked to exercise. I was running half marathons all the time and things like that, so I feel like I slowly started to realize that the foods that I ate really affected the rest of my life. I started to make little changes one by one. I think buying organic was the first thing I ever did.

That was really exciting. But then, I got more and more like that. Then also, a few years ago, I discovered that I had some sensitivity to foods which my doctor figured out; dairy and cow’s milk in particular. I just kept growing.

Then when I went to culinary school, I was looking at programs and I just didn’t feel any sort of connection to the ones that were more traditional, like heavy French-type cooking, a lot of sauces and things like that. I really wanted to learn about nutrition and how it affects you and how food really can be enriching. Then, when I did that program, that’s when my life totally changed.

Now, I eat mostly a plant-based diet. I allow a lot of room for exciting things to come in. I’m not dogmatic about it by any means, but it’s just how I enjoy eating nowadays.

I feel like that was the biggest “aha” moment. When my doctor said, “Cow’s milk is really causing a lot of these problems that you’re having, try cutting it out,” I was like, “Wow, that’s a pretty powerful thing.” I mean, I had a chronic cough. I had acne. I had all these kind of nagging little things that you could brush off as one thing or the other. But when I stopped, after about a month, they all went away and they’ve never come back.

Once I saw the results of that, it really changed. I wanted to change more. I wanted to feel even better.

I feel like just learning that one little thing changed so much about the way that I started cooking. Then once you get that feeling of what it’s like to experience that wellness, you crave it and you’re addicted to it and you just want more of that.

On Learning to Cook More Naturally:

It was a program based here in New York called the Natural Kitchen Culinary School. It was the only one I could find of its kind that combined traditional culinary techniques, so learning the basics like the knife skills and how to not burn things. Just to cook, follow recipes properly so that they come out really well. But in addition to that, they also taught about nutrition and these different cooking techniques like Macrobiotic and Ayurvedic. So I was really fascinated by all of that and it was the only program that I found that taught that.

On Starting to Cook More Healthfully:

One of the biggest things I think for cooking healthy is that maybe you don’t have the time. I found that a big thing for me was to set aside maybe a half hour, an hour, one day a week where you cook a batch of something, whether it’s quinoa or your beans or even just chopping up vegetables so you could snack on those instead of chips or something. Just setting aside any amount of time you can; any small or large.

If you want to spend all Sunday cooking, great. But even if you just do an hour a week, I feel like that really can impact the way that you eat for the rest of the week.

Even I will run to the nearest whatever take-out place to get something when I don’t have the time or the stuff in my fridge to do it.

Which food shows or cooking shows do you watch?

I love Chopped. I feel like I get a lot of great tips from there. Top Chef, and of course I’m a sucker for Barefoot Contessa.

What are some food blogs or websites that we have to know about?

One of the ones I learned about last year was Vegetarian Ventures. That was new to me and I find her recipes to be incredibly creative. I look at Sprouted Kitchen’s website all the time. I feel a real connection to the foods that she makes. There are so many.

Who do you follow on Pinterest, Instagram or Twitter that make you happy?

Instagram is my favorite. I love Oh, Ladycakes. She is a vegan baker and she travels a lot so she’s always got great posts. On Pinterest, Local Milk. She blows me away, she’s got amazing taste.

What is something all home cooks should have in their pantry?

Olive oil, absolutely. I couldn’t live without it.

Name one ingredient you cannot live without.

Olive oil, for everything; your sautéing, dressing your salad.

What are a few cookbooks that make your life better?

One of my favorite books which you might not hear a lot of people talk about is The Gramercy Tavern Cookbook. I feel like there’s a lot of techniques in there. If I want a basic vegetable broth, they just have some really solid techniques. I’m constantly referring to it which I feel is a little bit unusual.

The Silver Spoon is another one that I think is a little out of the box that has great basic recipes and techniques and stuff and you can find there’s thousands of recipes.

What song or album just makes you want to cook?

I feel like I play this over and over again. It’s John Coltrane’s album.

I feel like when I’m really getting in the mood, I always put that on. I’ve been doing that for years and years and I never get sick of it. I love it.

    On Vintage Mixer, Becky transports us back to her grandmother’s era. When folks cooked with fresh, local and seasonal ingredients and meaningful meals were shared around the table with good company. She lives in Salt Lake City, Utah and is deeply involved with the local food community there via her SLC Foodie website.

    I’ve been blogging since around 2008. Kind of a mixture of things. That’s the way I started it, too. I wanted to share some recipes. Some things around the house. Maybe some vintage clothing. It all boiled down to food in the end. It started as a conglomerate of lots of things. Inspired by my grandmother’s era of simple living.

    A simpler time of life.

    We’re bogged down by all of the technology. Connecting with social media, which I love. I think it also distracts us from relationships. I try to combine the two. Obviously I’m blogging. I’m online, but to put meaning back in that. To make it more relational. Like it was in that era.

    What comes the most naturally is probably coming up with ideas for the food. I always have a long list of different things I want to make.

    Writing can be natural for the most part. Writing the recipes can be difficult. Sometimes photographing. Depending on the time of day. That can be harder.

    On Her Interest in Cooking:

    Even as a child, I enjoyed playing around in the kitchen with my mom. Making cookies. Helping her flip the pancakes. Simple things like that. When I was in college, I was mentored by a lady who had her own fresh herb garden. I asked her to help me to learn a few more things.

    After college, I worked for a ski resort that focused on food, and all those things kind of come in together to enhance my love for food and cooking.

    Ruthie, my mentor in college. She cooked things really simply. Used fresh ingredients. I would say she was a big inspiration. More recently, online. People like Heidi Swanson of 101 Cookbooks or even Gwyneth Paltrow of Goop. People like that who are sticking to simple eating with fresh healthy things.

    On Food Culture in Salt Lake City, Utah:

    It’s actually really community driven. People are always helping each other. Wanting to see other people succeed. Although we’re seeing more and more great products come out of the city. It’s not competitive in the negative sense.

    A lot of local products and a lot of things that are back to the way things were done in grandmother’s era, like canning and old-fashioned cooking clubs, things like that, are popping up. Those are the things that have happened for a long time here in Utah. Now they’re becoming a little more popular again.

    Honey is one thing. We have a lot of high altitude locations where there’s beekeeping and honey farms.

    Cheese. We have several cheese makers that are highly valued around here. We have a salami maker called Creminelli who’s outstanding. He’s nationally known. We have a local hummus and Mediterranean spreads company called Laziz that we enjoy. Jams and things like that, as well. We have a lot of local products that are fun.

    On Places for Food Lovers in Salt Lake City:

    I would definitely say, sticking as close to downtown, the better. The suburbs around Salt Lake, you’re going to find all the regular chain restaurants. The closer you are to downtown, you’re going to find more diversity.

    If I’m answering just based on what I like, I would tell you you need to go to Finca. It’s a little Spanish tapas restaurant in downtown Salt Lake. Afterwards, you can go get churros next door.

    My husband and I own a little coffee shop called La Barba. We serve churros and chocolate. It’s right next to Finca. Biased, yes, but I would recommend that. Some other places. Pago. They serve seasonal fresh dishes. Copper Onion downtown has a famous burger. Then we have a lot of ethnic food that is really, really enjoyed around the city. Whether it’s Thai or Indian, we have our favorite places so…

    On Making Cooking More Fun:

    Turn on some music. Cook with people you enjoy.

    If you like cooking alone, just turn on some music. Keep it relaxed. Don’t try anything too difficult at first. Cook things you know that you’ll enjoy. If you’re trying something new, maybe have a back-up in the fridge. Just in case it doesn’t turn out.

    Don’t be too hard on yourself. Stick to the things you know you’ll enjoy.

    I only watch one and it’s MasterChef.

    What are some food blogs or websites that we have to know about?

    I have some friends here whose blogs I love. Completely Delicious and Two Peas & Their Pod. Also Foodie Crush and Mountain Mama Cooks. Nationally, I love 101 Cookbooks and I love Sprouted Kitchen, Goop. Blogs like that. That kind of have a similar feel to mine.

    Who do you follow on Pinterest, Instagram or Twitter that make you happy?

    Probably some of those same bloggers.

    Ones who give me inspiration. Who I feel like I can easily go home and make the same dishes that they’re making.

    What is something all home cooks should have in their pantry?

    A good supply of nuts, I would say. Nuts and dried fruit. Peanut butter or almond butter and honey.

    Name one ingredient you cannot live without.

    Maple syrup.

    Sometimes I will roast potatoes or squash with honey.

    I would say that and almond butter.

    What are a few cookbooks that make your life better?

    I like Heidi Swanson’s, Super Natural Every Day. The Sprouted Kitchen Cookbook. That was given to me by a friend. Vegetable Literacy. It was a good one. Bountiful, by a couple of popular bloggers. I like that one, too.

    Those are some of my favorites.

    What song or album just makes you want to cook?

    I always listen to Pandora. It kind of mixes up the genres but I might start with something like John Mayer. Something just easier to listen to. I know the words and songs.

    Loud Harp is a friend of ours. We enjoy his music.

      Renee is a writer, photographer, recipe developer, and chocolate maker. She eats a wheat-free, dairy-free and vegetarian diet, and her blog is a reflection of this. On Will Frolic for Food, you will find recipes for creative, savory vegetarian dishes and occasionally more healthful versions of something indulgent.

      On The Idea Behind Her Blog:

      I think the main idea for the blog came from just cooking in my daily life. I am bored very easily so I make a lot of weird, interesting recipes at home, and my now husband, then fiancé, was just really… I would make meals and he would say, “You really need to start a blog about this because people need to know these recipes. You can’t just keep them to yourself. It’s really not fair in a way.”

      From my side, I was like, “No, I mean that’s so much work. I don’t want to. I don’t know.” Finally I was just like, “This is probably worth my time to share this with people,” and it totally has been. The community is a major reason I keep going.

      I often have recipes that take me over eight hours to do. All in all, like recipe development, making the recipe, photographing the recipe, editing the recipe, post processing, writing; all things that go into it.

      It’s so much. I love every second of it, but it’s not easy technically.

      On Her Interest in Cooking and Food:

      I’ve pretty much always been interested in it. I have a natural affinity towards natural foods and wanting to feel healthy and feel great.

      I’ve always associated food with feeling good and being happy. I am sure the majority of that is that my mother is a fantastic cook and taught me how to make a lot of interesting foods and interesting meals out of nothing; out of like, “What’s in the fridge?” “I don’t know. We don’t have anything in fridge. I guess we’re going to make a pizza out of stuff.” She really had a good understanding of flavors and flavor combinations and how to balance meals. From that perspective, I learned all of that from her.

      A lot of my inspiration has come from friends who are just passionate about food, from my friends who were basically in this little vegan, raw foods, commune situation in college, because I am just sort of hippy at heart and all my friends are like that. I love the way that they eat.

      That was very inspiring to me to be with those people because they were just making these incredible curries, chutneys, and raw date brownies and it just blew my mind; so those people, and of course my mother, who gave me the foundation thankfully. I am very thankful for that.

      Beyond that, so much of my inspiration comes from incredible bloggers on Internet who have been doing what they do for so long.

      On Her Food Sensitivities:

      I ignored most of it. Well, the dairy thing I ignored. Funnily enough, everyone in my family is allergic to dairy; allergic, not lactose-intolerant. Most of them just kind of ignore it and the wheat thing I developed a sensitivity to in my early 20s in college.

      I started getting really painful stomach aches and was having really terrible digestive issues; it just hurt. I didn’t know what it was, didn’t understand it and it turned out to be a combination of sensitivity to peanuts and wheat.

      I didn’t get officially diagnosed with those things but I essentially cut both of them out, and then suddenly, “Wow. Eating is fun again and doesn’t hurt me anymore.”

      I just decided that I didn’t want to feel sick when I ate, and in my life, and I wasn’t going to compromise about that and I did for a long time. I basically was like, “I’ll eat wheat here and there. I’ll eat dairy here and there,” but then I was just feeling sick. It just got to a point where I was like, “I don’t need these things.”

      I do eat goat dairy because it doesn’t have the same sugars and proteins as cow dairy. I am able to digest that fine, so you see a lot of that on my blog. You see a lot of chevre and goat cheese, goat yogurt. I think it’s a wonderful food, personally, so I do feature that relatively often.

      On Learning To Cook with Food Sensitivities:

      There are tons of resources. There are some books that I really, really love that are really on point for teaching you how to make exact recipes. Inspired Vegan is amazing. I love that book. I think it’s Bryant Terry, and it’s so wonderful. Obviously all of the Ottolenghi books, anything that’s naturally wheat-free in there is incredible.

      Getting yourself out there and volunteering to help people cook big meals and for gatherings and things is another great way to learn.

      Obviously blogs are fantastic resources. I’ve got a massive blog roll of people who are constantly teaching me with their process and their way.

      I just have so many things going through my brain right now. I’m allergic to dairy, so the lactose and the casein that I’m allergic to but I eat Ghee. Ghee is amazing. A lot of people aren’t very familiar with it and a lot of people with sensitivities aren’t very familiar with the fact there is something that’s derived from cow dairy that they can eat.

      Ghee is a wonderful clarifying food that is good for the joints, it’s good for the skin and helps support the nervous system. You can actually put it on your skin and it’s very calming and moisturizing. It’s an incredible food. I love it. I eat it a lot. I make it at home so that’s something that I use often that I feel like I am probably preaching about a lot.

      Ghee is clarified butter.

      To make it at home, I get a really nice organic butter. If I can get it from a farmer that’s local — that’s fantastic as well — that I trust and then I boil it over medium-high heat. I skim all of the froth that comes to the top, all of the lactose and casein off of the top. I discard that.

      You just keep doing that until all of that frothy stuff is gone. Then you strain it and you pour it into a heat safe jar and you can use it. Generally a very clean organic butter, you’re going to be able to turn it into ghee relatively quickly and then you have this wonderful food that you can keep on your counter. You don’t even have to refrigerate it. It lasts for years — literally years — and it makes everything taste better.

      Tips for Cooking Gluten-Free or Dairy-Free for the First Time:

      Trust simple recipes. Starting with that, if you’re cooking for somebody who has allergies, trying to start out with doing a complicated baking recipe especially if you don’t have all of the ingredients and aren’t willing to follow all of the directions exactly, it’s going to be very frustrating.

      I just remember back to when I was first learning how to do gluten-free cooking a couple of years ago how angry I was. These recipes weren’t working for me but I always want to try something that is more complicated because I want to be the best at it right now, but I don’t know what I’m doing.

      Trusting simple recipes and finding a recipe developer that you really trust and that you really respect. I feel like I sorted through blogs and authors for years before I found people that I felt like I could trust their recipes. I wish I had a list of bloggers that I think are awesome and that I really trust their recipes. Actually I do have a list of inspiration on my blog of a bunch of different blogs that I love; not all of them are gluten-free but I definitely trust all of them. It’s just under the inspiration tab.

      Which food shows or cooking shows do you watch?

      I don’t really watch a lot of cooking shows but I could tell you that I want to watch a really cool cooking show that is all about seasonal eating but it’s fun and there’s traveling involved.

      I don’t have anything that I watch regularly. I watch YouTube videos of folks sometimes doing their thing. Green Kitchen Stories has some really cool videos.

      What are some food blogs or websites that we have to know about?

      Oh my god. Yeah, hundreds of them. That’s a terribly hard question but what pops in my mind, let’s see. Two Red Bowls — super awesome, gorgeous photography; hilarious and just wonderfully inspiring recipes.

      Dolly and Oatmeal, I love Lindsey Love’s recipes. They all are gluten-free, they are generally dairy-free, too; very creative and beautiful photography as well. I take a lot of inspiration from her recipes, so I just have to stress that.

      Let’s see, so many of them. Obviously, Local Milk. I mean do I even need to say it? She’s the best ever that ever existed. I want to be her.

      Eva Kosmas Flores of Adventures in Cooking has the most gorgeous photography in the world ever.

      I am trying to think of other gluten-free bloggers here. I am always super in love with My New Roots. Everything is great on My New Roots, and Green Kitchen Stories, and Sprouted Kitchen. If you do not read those, you’re a crazy person. They’re just so good.

      Who do you follow on Pinterest, Instagram or Twitter that make you happy?

      Also a very hard question. Instagram, I follow a lot of people, a range of folks who do everything from food to really wonderful landscapes and stuff. Again, Eva Kosmas Flores has a wonderful Instagram.

      What is something all home cooks should have in their pantry?

      Coconut oil, quinoa, always gluten-free pasta is a go-to for sure, and fantastic quality olive oil and sea salt are better than anything. I actually use JQ Dickinson sea salt which is a West Virginia sea salt which is very flaky. It is a little bit lower in sodium and has of mineral quality to it. I love it. When I’m out of it, I cry a little bit.

      Olive oil, I use Zoe’s because it’s really affordable in large amounts and it is really good, just delicious. I just feel like with good oil and salts you can make anything taste good.

      Name one ingredient you cannot live without?

      The JQD sea salt pretty much. I bring it with me everywhere.

      Pretty much anytime I say coarse sea salt, I’m talking about that salt.

      What are a few cookbooks that make your life better?

      Plenty by Yotam Ottolenghi, Inspired Vegan, BabyCakes Covers the Classics by Erin McKenna is the foundation of gluten-free desserts in my mind. She is such a genius with gluten-free desserts. I pretty much owe that cookbook everything. My basic understanding of how gluten-free baking works and what you need to make it work. I’ve definitely branched off from that but that’s the foundation for sure.

      What song or album just makes you want to cook?

      Everything by Kishi Bashi. His most recent album, I can’t remember the name of it. Yeah, I just want to dance around my house and cook.
