On her blog, Amanda shares food stories and recipes with the hope to inspire us to realize that the best meals are those made with fresh seasonal and simple ingredients. She believes that food doesn’t have to be fancy nor does it require expensive equipment. Amanda is also the author of Smitten with Squash, her cookbook with 80 original recipes on the squash family.

On Learning How to Cook:

There were some things that I just watched Grandma do, like my Grandma made the best loaves of bread. I never rolled them out with her, or kneaded, or anything like that. But I always ate what came from it and it was always the same and it was always so good. I could smell the yeast coming from her oven and things like that. So I think it was definitely a little bit of both. Some watching, some helping. With my other Grandma, she makes lefse every year, which is a Norwegian specialty, and I did help her, from rolling the balls to then putting it on the hot iron to getting it real thin, all of those little things, I did do with her.

It wasn’t really until about six years ago, I was living in Wisconsin and I moved back to Minnesota because I did grow up here. But moving into the Twin Cities, there were so many more farmers markets, so much more of a farm to table movement and just interesting food. I had never really taken the time to learn about or experience and so, I had this thing where I’d go to the market and every time, I would pick a new fruit or a new vegetable or even a cut of meat that I had never cooked with before. And I said, “We’re going to experiment. There is no judgment here. Just let the creativity flow,” and that is really kind of how my blog started too. It really forged this passion for telling the real story behind real food and real food recipes and it never gets boring. Because there is always something new to learn.

On Her Food Heroes:

There is so much inspiration that we are so fortunate to have because of the Internet. Years ago, it was just cookbooks which I still am inspired by today. But there is so much content out there and beautiful work being done all across the world. It’s eye opening every single day, and so when I think of my own cooking and who has inspired it a lot, I think of some of my favorite blogs like Lindsey of Dolly and Oatmeal, and Sherrie from With Food and Love, and Sarah Kieffer from The Vanilla Bean Blog.The way she is with baking and her precision and her beauty, you can’t look at it and not be inspired.

And then I think, even just typical sites like The Kitchn and Food52 have, whether it’s new ways of doing things or new ingredients that they are coming up with ideas for, and just the way that they look at food really inspires me.

I also have to say too, like even traditional people, I mean, I think Martha Stewart is phenomenal and she has gone through how many decades and not only evolved with but kept her brand. I only wish that I could throw a dinner party like her. Every little touch she does is really something special. And she takes the time to do it. I think that that’s part of what I love too and the change in me is that, cooking is an experience and I wrote about this on my blog. It’s much more than just for your health or for just putting it on the table. It evokes emotion, it can change mood, it can bring conversation. It’s just a beautiful thing.

On How Her Gluten Allergy Impacted Her Cooking:

So I have had quite a few autoimmune issues since I was young and still kind of battle it. But we finally figured out that one of the main stressors and causes was an intolerance to gluten. It was causing severe headaches and rashes and different things like shingles that I got when I was in eighth grade. I mean just very odd things, and finally, one doctor suggested that I stop eating gluten and it was basically like a miracle. Within three weeks, I was much, much better.

And at first, it was daunting. It was like, “What? You’re telling me I have to give up all of these foods that I love and I have to kind of relearn how to cook? How am I going to eat out?” All that type of stuff. And I can say today, that I would not probably be here sitting and talking to you if that had not happened, because what it did was inspire me to say, “Okay, here is what I can have. Let’s embrace this,” and what happened was it opened my eyes to all these new foods that I had never tasted or nothing that I grew up with, whether it be gluten-free grains like millet and sorghum, or teaching myself how to make flat bread that’s made from chickpea flour known as socca.

And to really too start to look at different cultures because, a lot of other cultures don’t use as much wheat or they use it in different ways, and so there are a lot of cultural things too that really were like, “Wow, this is good. I’ve been missing this for all these years?” And what I also started to realize was that most real food, that’s grown from the ground, plants, lean proteins and meats that are grown in a humane way, fruits, nuts, seeds, all those things are naturally gluten-free anyways.

It’s most of the processed food where the problem comes in. It made me feel good to get that burst of energy in the kitchen. And I wanted to share that with other people. Because as I was going along, I was meeting all these farmers or these artisans that were doing this really cool stuff that it didn’t matter if you were gluten-free or not. It was just really good stuff.

On Some Good Sources for Learning How to Cook with a Gluten Allergy:

It’s funny you ask that, because I had someone message me the other day. Their friend had just found that she was gluten-free. She was like, “Where do they start? How did that work?” And my first resource and still someone that I truly love and really think is such a benefit for the gluten-free community is Shauna from Gluten Free Girl, and her and her husband started a blog before gluten-free had really even been talked about. He was a chef and I read her book which was called, Gluten-Free Girl. It was more of almost a documentary but then also education on her whole transition, and it made me feel so much better. Like, “Okay, my world is not coming to an end. A, I feel so much better and now there is this whole new world of food that I get to explore,” and that was super, super helpful for me.

The other one, I don’t know if she blogs anymore. But her site is still very active. But Gluten-Free Goddess. There are so many beginner, basic recipes that will make you feel less intimidated, and that was really powerful for me too.

On Her Book, Smitten with Squash:

Smitten with Squash was published in July of last year. I was approached by the publisher who, they kind of do these, one book a year basically on a Midwestern fruit or vegetables that you love or that you’re very passionate about and the growing of it and history, because it is a historical publisher that publishes the cookbook. It’s the Minnesota Historical Society Press. They contacted me and were like, “You know, give us a few of your ideas, write a proposal around it. We’ve got a few others in mind.”

And I had always liked squash but what was interesting to me about squash, a couple of things is that, living here in Minnesota, our growing season is rather short. And squash, the family of squash between winter squash and summer squash, you can eat locally almost all year round here. Because summer squash is so abundant and then winter squash, you can store it for up to six months, and that will last you almost until summer squash is starting to arrive again. I thought that that was really neat because I do try to base my recipes off seasonal eating, because I feel like that’s when food tastes the best and you can become creative with what looks good at the market and things like that.

The other part that was really cool to me was that squash really is a part of every culture in one way or another and there aren’t very many foods that are like that. And so I just started formulating this idea about doing my whole book on squash and they accepted the idea.

There is 80 original recipes. There are about 40 summer squash recipes and then 40 winter squash recipes. And you’ll see everything from sweets to appetizers to pickles to main dishes, vegetarian to Paleo to kind of everything in there because it is so versatile.

The other real passion behind it is, you know how there are those foods that you had when you were young and you think like, “Oh my gosh, I do not like this because, this is probably the only way you can make it or this is the way I always see it served and I can’t stand this.” And when people talk about it, they are like, “Oh, yeah, well my mom made it, acorn squash. She baked it in a pan with some water and then when it came out she put butter and brown sugar on it. It’s just not good.” And I wanted to change that. I wanted to give people new ideas for what to do with summer squash in stuff like brownies or cake or things like that.

What are some food blogs or food websites we have to know about?

Well, the ones that I mentioned before. So The Vanilla Bean Blog, Dolly and Oatmeal, With Food and Love, Sara from Cake Over Steak has such an interesting food blog that has beautiful recipes but she also illustrates her recipes, and I know she’s been on your show, and she is fantastic.

If you’re looking for a wonderful vegan site, Abby from The Frosted Vegan has just a great way with words and she is one of those people that makes things very easy to understand. I love too, if you’ve never glanced over the blog, Green Kitchen Stories, just beautiful photography and wonderful, nourishing, healthy food that never loses flavor and is exactly what I love to do, which is cooking seasonally.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

Well, on Instagram, I love following The Fauxmartha. She has her little girl that she posts pictures of, but her food scenes are just so incredible and simple yet they just make me want to start cooking. That is something that is obviously what we all aspire to do. Another friend, her blog, it’s called Sunshine and Sea Salt. And she is just a real good friend and is an amazing recipe developer as well, but her words that she writes on Instagram are almost like sometimes blog posts. They are just beautiful. Oh, Ladycakes too is a really fun one to follow along with, and I love following her. Those are a few of my biggest inspirations.

What is the most unusual or treasured item in your kitchen?

My most treasured, the one that I use the most that like, if you could only keep three things from your kitchen, would be my Le Creuset dutch oven because they are just workhorses. They do everything that you could ever want, and then I used to think it was strange that my mom gave me my grandma’s silverware and now, I love it and I use it in so many of my photographs, and it really means a lot to me when I see it. And then, thirdly, are some of my thrift finds that I find while I’m out. One of those is this real old baker’s scale. You’ll see it in a couple of my posts and on my Instagram but they just don’t make things like that anymore.

Name one ingredient you used to dislike but now you love.

Ricotta cheese. I used to not like the texture. I only really had it in lasagna and I prefer cottage cheese over it in lasagna and that’s what formulated this dislike. Now, I think it is so great whether that’s baked with lemon and olive oil and herbs for an easy appetizer, or on salads. My favorite thing too is to put it into desserts where typically, you might use yogurt or something like that. It creates such a soft texture and moist, rich, just kind of like cake and it’s really a fabulous ingredient. But I thought I hated it. Now, I love it.

What are a few cookbooks that make your life better?

Deborah Madison’s Vegetable Literacy is, I mean, that should definitely be in your kitchen because it’s all about cooking with families of plants and how they all go together. It’s just really simple but interesting recipes and I use that as not only a reference guide but something every week in my kitchen.

Another one that I think you just should have it is Joy of Cooking, because every single technique or question you ever had about food is in there. There are also vintage recipes and modern new ways of doing things which I think is really cool.

One of my newest cookbooks that I use a lot and that I love is Sheet Pan Suppers and it’s all different recipes and it’s not just suppers but things that you can make on a sheet pan and have so little clean up. Very little clean up, like a sheet pan is just another workhorse too. And it creates delicious meals.

What song or album just makes you want to cook?

I wouldn’t say it’s any particular album or anything, but 50s and 60s music, some of those classic kind of blues but like, pop hits too. They’re all so upbeat and all have such a happy tone. They don’t make you think too hard and that’s kind of what I always have on in my kitchen.

Sam has been a food editor at Good Housekeeping, Fine Cooking, and Martha Stewart’s Everyday Food. Today, she’s a freelance recipe developer and food stylist and recently released her first cookbook called The New Sugar and Spice: A Recipe for Bolder Baking. She was also a Finalist in the 2015 Saveur Blog Awards for Best Baking and Desserts Blog.

I’m so psyched to have Samantha Seneviratne of Love Comma Cake here on the show today.

On Baking and Sweet Things:

I think I knew I was going to be a baker from when I was a really little kid. I told my family that I was going to be a baker and a librarian when I was five. I always loved dough and sugar and butter. I always loved working with those things. So as soon as I knew that people needed jobs to keep afloat, I realized that dough was probably the way I should go. So I think it’s in my blood.

I went to culinary school and I studied both savory and sweet, and I worked as a food editor at different food magazines. So in doing that, I pretty much have to do both sweet and savory, and these days I do some styling and recipe development both sweet and savory. I do both. I love doing the baked goods. That’s what I really want to do all the time.

On Finding Her Career in Food:

Well, it took me a long time to figure how I was going to do it. I went to college. I went to a liberal arts college, and I studied Latin American studies, and Spanish Literature, and then I got a job after school in public television, and then worked for a different non-profit. I had a bunch of other things that I was directing my life towards. Then, all of a sudden, I just realized what I really loved to do is cook, and that I should just go to culinary school and make it happen. But it took me a while to figure out how to do it because I’m not really a restaurant chef. I have great respect for restaurant chefs but that’s not what I do, and I knew that wouldn’t be my path. So it took me awhile to figure out exactly how I was going to make a living cooking. And magazine test kitchens were the place for me for awhile and that worked out well.

I had a friend who worked at the magazine, and she played on a soccer team with an editor at Gourmet magazine. So I told her I was interested in food and she said, “Well, why don’t you meet this guy. He’s a food editor at Gourmet.” And he took me on a tour of the gourmet test kitchen and showed me what he did, and I thought, “That looks like a good job. That looks like exactly where I should be.” So after that visit with him, I went to culinary school and that’s what I did.

On Her Food Heroes and What She’d Make for Them:

I mean the baking heroes like Dorie Greenspan and David Lebovitz, and there are so many, Rose Levy Beranbaum. There are so many baking stars, so many classics.

I’m really into fried dough. Lately, I’ve been really making donuts and just this morning we made apple fritters and funnel cake. I think fried dough is what I’m really feeling these days. It’s not good for you, but it’s fun to make.

The thing is the difference when you fry it and then eat it right out of the oil, toss it in sugar and then eat it. It’s a whole other ball game. It’s so much more delicious than anything you can ever buy because it’s a timing thing. So I’d probably make some fried dough of some kind.

On Her Blog:

I wanted to get more of an online presence that was just me. I was working at different magazines, and I love working in magazine test kitchens because you’re really part of a team, and you’re all creating this food in this vision and under this brand name.

I wanted to have a body of work that was mine, and that I could contribute to and that was 100% my voice. Just exactly what I wanted to make whenever I wanted to make it and so that’s what I did.

I just was craving a place where I can have complete control over everything I did. So that means any whim that I had I just was able to do it.

On Simple Rules of Thumb for Baking for Greater Success:

I think people are more scared of baking than they need to be. There’s a little more flexibility than people think there is. Things could vary slightly depending on how warm your butter is or something like that, but your disasters are rare, right? So measuring flour is important, temperatures are important. I think measuring flour is number one. Once you’ve learned how to measure flour, things are going to improve greatly, or get a scale, also, a really good way to go.

(On baking with cold eggs.) You can totally warm them up. There are little tricks like you can keep your eggs in some warm water and that’ll heat them up. Or you can even if you crack them into a bowl and then let them warm up that way. That also works. You can warm up your butter by pounding it with a rolling pin or sometimes I even microwave it on a low 20% power, 50% power, you can warm your butter up. Which a lot of people don’t recommend because it’s easy to go from cold butter to melted butter and then you’re kind of screwed. But you can do it. It works. But I think measuring flour is number one.

On Her Cookbook, The New Sugar and Spice:

It was a long process. I probably started a proposal for that book four years ago. It took me a long time to write the proposal. I wrote a proposal for a book I wasn’t that happy with, and then I scrapped it and then wrote a new proposal, and it took a long time to get the proposal in good shape. And then I shopped around with agents. Then she helped me work on the proposal and then we pitched the book. It’s a long process, but I always had the dream of writing cookbook. So just finding the book that felt right and it took me a long time to get there, and I think I did. I like it.

It’s basically a baking book and I use spices and the chapters of the books are all organized by spice. The general idea of the book is that I try to use a little less sugar. I don’t like overly sweet desserts, and I think that it’s easy to fall to that trap. I think sugar can be a crutch. So I try to develop recipes that were a little bit less sweet and used spices to amp up the flavor in a more complex and interesting way. That’s not to say they are low sugar or diet or anything like that, but they seem to me to be a little less sweet and a little more interesting.

I also wrote a lot of history. I got into researching the history of certain spices and how that related a little bit to my family history because my parents are from Sri Lanka. I started digging into the history of cinnamon, I realized that my great grandmother grew clove trees in her yard, and my great grandfather grew vanilla beans. And I learned that my family’s history was intertwined with spices in that fun way, so I wrote a lot about that.

I had fun writing the intros that were all about spice history and my family history and having really personal head notes about my parents, and my brother, and things like that. That felt unique, and fun, and special to me because, as a food editor for a magazine, you don’t ever get to just write about yourself or write about why you like something. You don’t get that opportunity very often and so I took it in the book.

Which food shows or cooking shows do you watch?

I don’t have cable television so I don’t watch anyone.

What are some food blogs or food websites we have to know about?

I have a lot of food blogs that I love. It’s going to be hard to list them. I love Brooklyn Supper, and I love Two Red Bowls. And I love The Fauxmartha. Those are three right now I’ll tell you that I love.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

The only thing I do out of all those things is Instagram. So I would say, I think David Lebovitz is really funny and his Instagram account makes me laugh.

What is the most unusual or treasured item in your kitchen?

I have a little dowel that I got at a hardware store. I had them cut it down so it’s like a four-inch dowel. I don’t know what they’re for when you buy them at the hardware store, but I use it to roll out little pastries, and I love it. It’s the most useful tool in the world and it was a dollar.

Name one ingredient you used to dislike but now you love.

I’m into anise seeds now and I didn’t think I was into it before. Actually the book, writing that book, I have a couple of recipes for anise seeds in a biscotti and in a pear tart, and I think they’re both delicious. I’ve really come around on anise seed.

I hate liquorice like so many people, but I didn’t realize that if you use anise seeds sparingly and if you pair it with something delicious, it can work in combination with other things. I just hadn’t figured that out yet, but I like it.

What are a few cookbooks that make your life better?

Regan Daley’s In the Sweet Kitchen is one of my all-time favorite books in the whole world. I think that book is super smart. There’s a lot of information at the beginning. It’s a baking companion, and there are glossaries and flavor pairing charts and things like that, that make baking really easy and inspire you to do good things. And then the second half of the book is all these wonderful recipes. I think that book is genius. That book makes my life better.

What song or album just makes you want to cook?

Oh my gosh, anything. I just like Beyonce, Taylor Swift, and all those guys. That kind of music, I love it.

Melissa admits to having a severe sweet tooth, and on her blog, The Fauxmartha, is where she shares her tried-and-true recipes that she brightens up to suit each season. She confesses to being an over-sharer, and believes that when you find something that works, and works well, it must be shared.

 On Cooking:

I came out of the womb loving food. My mom said I was four years old, sitting at the breakfast table, and she said I would be asking what we were having for lunch and dinner while eating breakfast. And she always told me, “Melissa, eat to live, don’t live to eat.” And I still live to eat and I eat to live. I love food.

So it started with a love of food and as I grew up, probably even as a little girl I would go over to my neighbor’s house and make cookies. I even loved to bake as a young girl and then in high school, as soon as I could kind of clean up my own messes, my mom would tell you otherwise, but I started baking in the kitchen and experimenting with all sorts of crazy stuff. People were so nice to try my stuff. And that just kind of continued.

Once we went to Chicago and I was on my own, married, three meals a day, I needed to somehow prepare and I liked knowing how to do things. I liked knowing the science behind things, I liked knowing how things work and I think that’s kind of what fuels cooking: how does this work? How does baking soda work with liquid in the oven, at what temperature?

In college, I think I was probably the only one doing this, I was watching Martha Stewart on the weekends, that was really cool. And then that fuelled the interest, and she talked a lot about theories behind stuff, so I learned enough to be able to talk about it. And then one Christmas I asked for, I think it was King Arthur Whole Grain Baking Cookbook, it was this huge thick cookbook. I think it was a pale pink. I read that thing from cover to cover. I learned about wheat and the germ and the endosperm, and everything. I learned how wheat is bitter and how to cut the bitterness.

I liked food so much I had to watch myself, so when I baked I tried to use wheat flour and then tried to lighten things up for a long time. I still use a lot of wheat flour now. But I guess I would attribute a lot of that knowledge to the King Arthur Whole Grain Baking bible. It’s chunky, it’s thick.

I have not read through it in a really long time. I’m sure a lot of bloggers, and just home cooks in general experience this. You make a lot of other people’s stuff at first, a whole lot, until you begin to learn what the ingredients do together, and what you like. And so now I have my cake recipe, or my bread recipe, or my muffin recipe, like a base recipe, and then I tweak it from there. So they are my recipes, but it’s a long heritage of people and books that I learned from.

On Her Passion for Food and Cooking:

I always liked to create even as a kid, and I think that’s a little bit of what food is for me too, it’s creating. But my background is in design, so I’ve been a graphic designer for a long time. When we moved to Chicago I had a design job and I liked it for a while, and then I didn’t like it for a while, and I just kept thinking. I had these long drives to work and I would just think, “There has got to be a way to merge my two loves. There has to be a way to merge design and to merge food.” And at that point I was always blogging, and I didn’t really know that those two were so inter-connected. The way I think about food, the way I think about recipes and writing the recipes is the way I think about design. How do I communicate this in a really simple but beautiful and real fashion?

I talked to a couple of other people who were struggling to figure out what do I do? I don’t even know what I want to do. And I always tell them, “Just play.” And that’s what blogging was and cooking was for a really long time, and probably still is in a lot of ways. But just play, and natural things come out. And that’s what it was for me.

On Not Being Creative or Adventurous with Food:

(Who she thinks is creative.) It’s Molly, Molly Yeh. She’s just so fun in the kitchen. She has fun with her recipes. She’s playful with her recipes. She plays, she really plays in the kitchen. I like her approach and it encourages me. Also, through the years, I’ve followed Turntable Kitchen and I like the spices that they use in recipes. They turned me on to cardamom and so did A Sweet Spoonful. Her granola recipe, marge granola that she makes, she uses cardamom. So things I wasn’t used to trying, I never grew up with, looking at their recipes, and making some of their recipes encouraged me to add those things into mine and explore a little bit.

So I’ll just tell you a little bit about my embarrassing story that happens over and over again. I get to a meal. I am with other people who would call themselves foodies and food enthusiasts, and they bring out a plate of burrata cheese and I’m, like, “Oh no, not cheese.” A big pile of cheese turns me off big time. It’s a texture issue, and it’s a mental issue. I kind of have the palate of a child. But it’s embarrassing every time, and every meal.

I went to an event the other week and at multiple meals I had to talk about my distaste for cheese, or I had to tell them I like mild cheddar cheese. I like Parmesan, I like a certain Feta that I can get at my co-op. It’s super-duper embarrassing, but I’ve learned to own it. It’s like, I don’t like cheese. And that’s okay, and I like to bake, and that’s okay. So I think just figure it out, just own it.

My husband has taught me that. He tells everybody before we go over to their house, “She likes this and she likes that.” I’m like, “Don’t tell them that, that’s so embarrassing.” But it helps. It’s not awkward. It’s way less awkward. So just own it.

On Her Tried-And-True Recipes:

Most of the times, it’s the food that we make over and over again. I find myself with blogging, I try to think of recipes sometimes for my blog, and I’m like I should just post the recipes we make. And I need to figure out how to articulate this recipe. But we make a lot of bowls, like food and bowls which start with a grain and some vegetables and some kind of protein which is usually beans for us and then a sauce, and it’s the things that we make over and over and over again. I almost want to delete any recipe that I’ve only made once. Because most of the recipes, we make them. My blog is my resource, that is what I cook from. And then I add new recipes that we make.

A lot of the inspiration has come from things that we have eaten out, or some of our favorite things that we have out, how can we make them at home? And, probably, how can we make them better and cheaper ourselves? And that’s kind of where they come from. We’re just pretty basic people, like when I am thinking up meals for the week, I start with a grain and then build the recipe around that. I either start with a grain or I start with the vegetable drawer.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

None. None. None. I used to. We’ve just gotten Hulu. We were no cable people for a long time. I watch Rick Bayless sometimes on PBS because we can stream it through an antenna.

What are some food blogs or food websites we have to know about?

A new one to me is Renée Kemps; her photography is beautiful. I go to her site to just bask in the photography. And then Love, Cake. She is actually who I base my scone recipe off of. Her recipes are so good. It’s a baking blog. I think she even has a culinary background. Her photos are beautiful. Go to Love, Cake.

We make a lot of bowls, and they can get kind of mundane and redundant, so I go to Pinch of Yum because Yum has all the sauces in the world. They are quick and easy and they come together in no time, so go to Pinch of Yum for your sauces.

We eat a lot of vegetarian foods. We are not vegetarian, although people think we are, so I go to Cookie and Kate and Naturally Ella and A Couple Cooks for inspiration on that front.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

So, I’m a Pinterest delinquent. I’m barely on Pinterest. Facebook, I follow Cookie and Kate again. I love her recipes. She has roundups, which are so nice, because I just need a lot of ideas.

I like FoodieCrush on Facebook, she also has a ton of ideas. She is fun and playful.

Instagram is my time suck. I spend all my time there. I love Instagram. Again, I love Renée Kemps; her stuff is beautiful. Gosh, she’s the one that stands out the most to me. I love her stuff right now.

And then Snapchat, I am not going to join. I have to save my time somewhere. I spend it all on Instagram, so…

What is the most unusual or treasured item in your kitchen?

I am going to go with treasured; it’s not unusual, it’s very every day but it’s my chef’s knife. I have used it so much; I use it multiple times a day. The handle is starting to chip away, which it shouldn’t. It’s never spent a day in the dishwasher, but I use it so much that it is well loved.

Name one ingredient you used to dislike but now you love.

I would say I am working on cheese. Feta; I like certain Feta. It’s got to be pretty fresh.

What are a few cookbooks that make your life better?

Whole-Grain Mornings, it’s by Megan Gordon, I mentioned her earlier. I love that cookbook. It’s like a handbook for brunch, which is our favorite meal. And then naturally I love Erin’s new cookbook, The Easy Vegetarian Kitchen. It’s like a really resourceful vegetarian handbook, seasonal, so she’s got a base recipe and then how to make it across the seasons. I’d say those are the two dirtiest books in our house, which means they are well used and well loved.

What song or album just makes you want to cook?

I listen to Sylvan Esso. I don’t know if people know of her. We listen to her over and over again. Her song Play It Right is kind of a little too mellow, but it works for me, and my daughter walks around the house saying, “Play it right, play it right, play it right.”

On Her Interest in Cooking and Food:

I liked to always cook and bake as a kid, I think it wasn’t anything too crazy but I loved having independence, being able to do that. I got more seriously into food later when I had health and digestive problems and I had to find a way to feed myself.

I found out I was gluten intolerant and decided to go vegan at the same time, so my options were very limited and I felt kind of inspired by those restrictions. It gave me the opportunity to try so many new foods and stuff.

I was always into food. I liked eating really healthy. I was raised in California. I loved hippy food and Mexican and I was always really into it, but it took a turn when it became more about health.

I don’t know if I had any real cooking mentors in my early days. I definitely think I was inspired by the issues that I had with western medicine. I remember the first time I went to a western doctor with all of my issues and I had all these PDF printouts of everything I’d been eating. He didn’t even want to look at it and just said, “Here’s some medication. You have IBS,” and sent me on my way.

I just felt like there’s something bigger going on than this. I totally believe that food is an opportunity to heal yourself and that was what got me into it in a really real way.

On Learning to Cook:

I was definitely forced to learn to cook it a new way because of my dietary issues. But through that, I really fell in love with food and I wanted to be completely absorbed in it. That’s a really good way to learn anything.

I find such inspiration from cookbooks and food blogs. Like finding someone who’s really committed to a certain way of cooking, whether it’s a cultural or otherwise, someone like Ottolenghi who has a very specific sense of food that’s so seductive and wonderful but it’s also really easy when you’re really into it.

Obviously, most of us are trying to feed ourselves. I feel like a lot of home cooks are super worried. How do you cook it? What do you do with it? They forget the aspect of play, it should be fun. It’s also not that hard.

I think generally not taking yourself so seriously. It’s okay if you make something that’s a disaster although it probably won’t be. Don’t be afraid, try new things, read cookbooks, follow recipes, pay attention and cook as much as you can.

I’m a fan of things like give yourself parameters on certain nights. Have a taco Tuesday, so you’re like, “I know I’m making tacos tonight” and you can just decide what kind of taco and then that can be the fun aspect.

On Kitchen Experiments Not Going as Planned:

I have a really good infamous one.

The first time I decided I was going to cook a whole fish was for a pescetarian Thanksgiving that I was hosting. Martha and Ina are scowling at me right now because it’s the cardinal rule of hosting to never test a new recipe. But I decided to do it and I took the fish out. It’s perfectly cooked but I had no idea how to de-bone it. I was like, “I can’t serve this to people,” and I literally just left it on the stove top and I was like, “Sorry, guys. We’re actually not having fish tonight.” And I just went on.

I was just like, “Well, I guess it’s just vegetarian, so sorry about that.”

I mean, with gluten-free baking, there’s so many. It’s just like too many to know but it always happens. It happens to everyone.

On Some Go-To Resources for Learning to Cook and Bake:

When I first started cooking and baking, I was vegan and gluten-free so my sources were super specific. But in general, I think I would recommend sources like Bon Appetite, Epicurious, The Kitchn, and Food52. They seem to have really good articles that demystify cooking and they go over actual techniques in a way that teaches you the fundamentals.

A few of them have a lot of articles about cooking without a recipe and stuff like that. It teaches you how to cook on the fly. I just think those are really helpful resources for sure.

On Starting Her Blog:

When I first went gluten-free, the best and most helpful sources were definitely food blogs. That was where I was finding all of my recipes and information. They were such a godsend at the time and through the process of changing my diet and trying new things, I craved to have the same platform to share my experiences.

I went to school for photography. I went to Parsons in New York. I was not shooting food or even still life at the time. Food or food photography was not on my radar at all, in any professional way. But through doing the blog and loving it as much as I did, I found people were really responding to that work.

The first time I ever showed food work in a class at school, the guest teacher offered me a job shooting for a magazine. So I thought maybe I should pursue this a little further.

I started in photography but I will say food photography is completely different. I was not immediately good at it. I had to work. It’s a total learning curve and it’s a lot harder than it looks I will say.

On Gluten-Free Foods:

Well, I’m sure everyone’s heard of it by now. It’s a big buzz word since it’s on every product now, even hummus, which has always been gluten-free says gluten-free on it. But it’s technically the elastic protein in wheat, it’s what makes pizza and croissant so lovely and it can also be in all of these other products like soy sauce and dressings, which it doesn’t necessarily need to be there.

That’s when I think it gets tricky for people and they don’t understand what it is. But there’s also a huge variety of gluten-free grains and products to choose from. I just saw the other day a quinoa kale puff popcorn product.

Now is the time to be gluten-free because there’s just everything. Rice is gluten-free, all rice products are gluten-free. A lot of people don’t know that. I get asked that all the time.

When in doubt, a piece of meat is always going to be gluten-free unless it’s battered. It’s like there’s a certain aspect of logic to it, but it is tricky for sure.

I do feel a lot better than I used to. Eating this way definitely suits me. I have some moments where I’m reminded of all the pain and discomfort I used to feel all the time. So I’m definitely happiest when my diet’s pretty strict and pure. That being said, it’s still not perfect. I don’t feel absolutely amazing and energized every single day, but it’s constantly evolving with what I feel best eating.

On Gluten-Free Ingredients:

There are so many, especially with the baking. I’m obsessed with gluten-free baking flours.

My favorites of all time are definitely sorghum flour, which I discovered super early on. Brown rice flour, almond flour, buckwheat flour, garbanzo bean flour, anything like that. There are so many.

Even cornmeal, things that you wouldn’t think of as being gluten-free are so amazing to cook and bake with. And then things maybe you wouldn’t have heard of are things that you use kind of to mimic gluten like xanthan gum and potato starch and tapioca flour.

But they’re so fun. Even if you’re not gluten-free, baking with buckwheat or something like that, it’s just a new thing you wouldn’t maybe go towards.

Buckwheat is this dark grayish tint and it’s very beautiful when you bake with it. And I love almond flour. I buy five pound bags of it off of Amazon. I use it very quickly. I love anything with almond flour. It’s super good and they all have a very lovely different flavor.

On Some Good Gluten-Free Cooking and Baking Resources:

I love La Tartine Gourmande and Cannelle et Vanille are both really amazing sources of inspiration. I highly recommend both of their books, especially Small Plates and Sweet Treats by Aran Goyoaga. She’s a trained pastry chef and she has this amazing Basque influence on all her recipes. They’re super great.

Also, Bojon Gourmet. She’s another ex-pastry chef and she has a ton of super great gluten-free recipes as well.

Which food shows or cooking shows do you watch?

Well I don’t really watch any shows besides Ina obviously, but I need to stop name dropping.

But I’m the biggest podcast person, I love America’s Test Kitchen. I’ve such a soft spot for them and I feel like no one gets how great they are. I love Splendid Table and Heritage Radio Network and Good Food on KCRW, and obviously, The Dinner Special as well.

What are some food blogs or food websites we have to know about?

I am in love with Amy Chaplin. I recently got her book and went through like a food renaissance ’cause her recipes are just so lovely. I so recommend her and her blog is amazing.

And you know, I keep coming back to Heidi Swanson of 101 Cookbooks. She’s still so relevant and amazing and I’m always inspired by her essence. She’s living my dream life.

Who do you follow on Pinterest, Instagram, or Facebook that make you happy?

Well, I’m huge into Instagram. That’s my favorite thing. So on and Instagram, I recently followed the chicks from Broad City who are super fun.

I’ve mostly been loving non-food ones lately, like Sight Unseen and Academy of New York. And Niche is a great one where they just post quotes from creative artists and all that stuff. And Official Sean Penn, which is just funny and great.

What is the most unusual or treasured item in your kitchen?

I love everything in my kitchen.

I’m constantly trying to get rid of stuff because I live in New York and that’s just the life, but I love everything in my kitchen. My favorite things are probably . . . my boyfriend has gotten me ceramics as gifts over the years. That was one of the first things he ever bought me and they’re definitely my treasured pieces.

Name one ingredient you used to dislike but now you love.

Capers and olives I hated until I was probably 20 years old, but now, I almost always have them in my fridge. I love them.

I think I was not into that brininess and then I went to Spain with my family and they served green olives on every table like it’s bread. I kept trying, thinking if I keep trying it, maybe something will click and it did. So keep trying!

What are a few cookbooks that make your life better?

I love anything by Nigel Slater, Alice Waters, The Canal House Cookbooks. And as I mentioned before, Amy Chaplin and I love Mimi Thorisson’s new book.

What song or album just makes you want to cook?

It’s gotta be something on the up-side.

There’s always music in my house. My boyfriend’s a musician. He’s constantly manning the record player. But for cooking, I think Elvis Costello always puts me in a good mood.

039: Amelia Morris: Failure, Success and Fearlessness in the Kitchen

Bon Appétempt

Amelia’s blog has evolved as her cooking and life has changed over the years, and her readers have been along for every step of the journey. An essay Amelia wrote about her kitchen visit with her grandma won Best Culinary Essay in Saveur’s 2011 Food Blog Awards. In 2012, Bon Appétempt won in Saveur’s Best Humor Blog category. Amelia recently released her book, Bon Appetémpt: A Coming-of-Age Story (with Recipes!).

I am so excited to have Amelia Morris of Bon Appétempt here on the show today.

On How Her Blog Started:

It really started as an accident. I was house sitting for my friend, and they have a beautiful house, and I got the idea that I could have people over for Christmas day brunch, and I decided to make this cake from the cover of a Bon Appétit. I’d never made a cake from scratch before, and it was this towering chocolate peppermint cake. But I thought I could do it. I gave myself multiple days to do everything ahead of time, and I basically did do it except as I was putting the icing on the cake. The whole thing started to slide, and it fell over.

My husband and I had been taking pictures of the whole thing because we were so impressed that I was making this gigantic cake. So then we had pictures of the rise and fall.

Afterwards, I just kept looking at the pictures and I just kept thinking there needs to be a food blog where it’s like the home-cooked version versus the magazine version. I just thought I was the perfect candidate because I didn’t know how to cook and I thought, every time, each post would be a disaster. I know it will be really funny.

This was six years ago. At first, I really wanted to make fun of the perfection and food magazines and just how fake it was. My intention was to mix it up but it could be funny.

On Her Sense of Fearlessness in the Kitchen:

I’m afraid of a lot of things and there’s a lot of stuff I haven’t tried. I don’t know if I’m afraid, but I don’t want to maybe make such a giant mess.

When I first started the blog, I wasn’t afraid of making mistakes because, A: I thought it would be funnier if I made mistakes, and B: my self esteem wasn’t tied to the kitchen. If I messed up, it didn’t injure me in any way as opposed to my other endeavors where it hurt when I failed.

I did redo the original cake that started it all and made it successfully. It was beautiful, so that felt pretty good.

I tried to make a Martha Stewart bread wreath, and it’s basically bread in the shape of a wreath. And it was an epic failure. We have a video of it on the blog, and I broke a pan in the oven. Because when you bake it, you’re supposed to have a pan of water underneath.

That pan of water broke, and so the water started gushing out into the oven. And basically, the wreath still turned out; it was an edible piece of bread and everything.

I’m always surprised with Martha Stewart’s recipes like that where you just have pay such attention to detail to get it even close to what Martha Stewart has in her magazine.

On How Becoming a Parent Changed the Way She Cooks:

Oh my gosh. Well, I feel like this changes a lot; because at the beginning, you’re just getting used to everything. And I feel like even though they sleep a lot at the beginning, I just wasn’t in my normal routine.

I used to see recipes, be inspired, go to the store, come back, cook it that night. And I feel like at the beginning, that was not really an option. And now, he’s so mobile that he won’t even… If I’m in the kitchen, he’s running to the back of the house and I have to go see what he’s up to and all that stuff. So it’s changed a lot. I really do much more simple things and I do a lot of stuff I know by heart.

I try and do a lot of stuff while he’s eating dinner. He usually eats around five, so I’ll try and do chopping and any sort of prep work that I can do while he’s contained and he sits. And then he goes to bed around seven and then I finish cooking once he’s in bed.

There are so many good things you can make with not a lot of ingredients. I feel like that’s my go-to thing. I mean, we eat a lot of pasta around here and I do a lot of shortcuts, I guess, like I find myself recently buying mushrooms that are already sliced and cleaned, which I never used to do because I always think the person doing it isn’t doing a good job of cleaning it. And now, I’m just like, “Oh, well.”

My mum would always buy a rotisserie chicken and have it in the fridge, and I would never do that. I would just do it myself. And just this week, I bought a rotisserie chicken and I made a chicken pot pie, a version of chicken pot pie, and then I just pulled the meat off of it.

The answer to the question is I’m still figuring out how to have shortcuts; what shortcuts to come up with.

On Her Videos:

Basically, my husband went to film school and the book goes over our mutual struggles to find creative satisfaction.

He wanted to be a filmmaker, still wants to be a filmmaker, writer, and we both had day jobs not doing anything remotely creative. I think I just got really inspired to do a cooking show by watching cooking shows and just watching how staged they are.

I just don’t really understand why everything needs to be so perfect in cooking shows. They’re all in full makeup and no aprons. So I was really inspired to do a cooking show that was more real and where it would show me cleaning up and stuff like that, and Matt was excited to try shooting again which he hasn’t done since college.

On Her Book, Bon Appétempt: A Coming-of-Age Story (with Recipes!)

The book is basically my life’s story, but it’s pretty much about growing up and trying and failing. And the way it came about matters because I went to grad school for an MFA in Writing. And my thesis was a novel and I continued working on it after school.

So I sent a novel to a bunch of agents, and one of them got back to me and was like, “Yeah, I’ll read your novel,” but she’s on my bio about my food blog and she was like, “I’m really interested in Bon Appétempt.” A long story short, she really wanted me to work on a food memoir. I guess I never really thought of doing a food memoir up until that point.

So I was excited about it. I was totally excited about it even though she wasn’t interested in my novel. I was kind of excited at the prospect of my writing career finally getting off the ground a little bit. And so I just jumped on the opportunity and I was like, “Totally, I’ll do a food memoir,” and I started putting together a book proposal.

I love my blog for many reasons and it’s great. But I think that there is this pressure to post. And for a while, I had a schedule. I would post every Sunday night. And I just think that the quality of writing would often suffer because I was just like, “I’ve got to get the post up. I’ve got to get the post up.” And with the book, I could really take my time and I didn’t feel a sense of urgency. I felt like I could talk about things that I didn’t feel were appropriate for the blog. I could start at the very beginning of my life as opposed to what’s going on right now.

What is the most unusual or treasured item in your kitchen?

Well, I have this magenta-colored skull. It’s small. It’s a scary-looking skull. His eyes are red glitter.

Name one ingredient you used to dislike but now you love.

There was a point in my life where I said I didn’t like pasta, and now it’s something we eat three times a week.

I was a young woman constantly on a diet and I convinced myself that I didn’t like pasta.

I just wouldn’t let myself eat it.

What are a few cookbooks that make your life better?

Anything by Nigel Slater, but probably The Art of Simple Food by Alice Waters.

What song or album just makes you want to cook?

I love any sort of Van Morrison; that sort of realm of music.

On Starting Her Blog:

This is a thing that I’ve never really talked about on my blog, but I actually had a personal blog in college.

So actually before Sugarlaws was born I had a live journal for about three years in college. And then I gave it up when I started law school because I had this idea that I was going to be this very serious lawyer, and very serious lawyers don’t blog and certainly don’t write about things that they do on the Internet.

I found that I just missed it so much. I just kind of missed having that outlet. I missed sharing with people that way. I missed getting to know people through blogging. And so when I was a year out of law school I started Sugarlaws. In a lot of ways I think it was kind of a natural outgrowth.

I love to write. I’ve always kind of been a writer. I think it’s something that I was born with. And so it felt very natural. Again, I think it was also a way not even just to write but to communicate and to connect with people.

When I first started Sugarlaws it was exclusively recipes. It was because I was learning how to cook. I was sort of on my own for the first time.

In law school I hadn’t really cooked very much and I was starting my first job and I wanted to learn this skill. I found that I was taking pictures of these recipes, that I would make them and email them around to my friends and my family. I just thought, like, “Okay, well, why not put them on the Internet?”

I originally thought it would sort of be my own little cookbook that I could come back to and have all these recipes and figure out what I liked about them and what I didn’t, and what I tried and what I wanted to try. Then suddenly people started reading it. That kind of shocked me at first.

It’s like, “Who are you? You’re not my mom, what’s going on?” It was really my cooking adventures for the first year and a half. Then eventually as I felt like I’d mastered a lot of cooking skills I expanded it to add fashion and beauty and lifestyle. And now again I’ve kind of expanded it to write about parenting a little bit.

On Her Connection with Her Readers:

One of the things that I always think is really cool is I’ll get emails from readers a lot and there’ll be people who say, “I’ve followed you since those early days when you were taking a photo with your little point and shoot,” because I didn’t even have an iPhone back then.

And they looked terrible but they kind of, I feel like, I really feel like those are my friends. Those people that I know now or have known me for six years, seven years now. I think what keeps people coming back is the human being behind it. Lots of blogs have beautiful pictures and that is something that obviously the blogging world is just amazing at creating, but what makes blogging different from magazines and other places where you can see these beautiful images, are that you kind of get to know the human behind them.

I think that really has been, if there’s anything I think that makes my blog popular, it’s that people sort of feel like they know me.

On Her Epic Holiday Fail:

Yes. So last Christmas we . . . well so I have a very big kind of extended family.

We had my parents in town and my sister and then my husband’s parents and his brother and his brother’s wife and their son. And I was responsible for cooking Christmas dinner.

I did all the things in preparation, like I had my recipes ready, I had a schedule of what needed to go in when. It all was going okay until everything got ready. At that moment had I been a really on-the-ball hostess I would have said, “Sit down at the table right now.”

But instead, people were talking and that was fun and so I just sort of gently hinted that people should go to the table. It took like an hour to get everyone to the table, at which point all of our food was burnt.

There was nothing to eat.

Usually I take pictures of everything. I take pictures of my shoes practically every day. But I couldn’t take any pictures of these burnt potatoes because I was so mortified by them.

It was just one of those moments where I was so excited to cook this Holiday dinner and I really felt like I could rise to the challenge. And then I just burned everything.

I think in some ways I actually kind of love it as a story now. At the time I was really disappointed in myself. I couldn’t talk about it for a while. My whole family had to pretend I’d done an okay job, that it wasn’t really that bad. Then they threw everything in the trash after we were done.

So it was just a total epic failure.

But you know I think probably everyone in their life is going to have one of those stories. You know one of those Holiday dinners that just didn’t quite go the way you planned. Those are probably going to be the ones that you remember even more than the ones that go perfectly.

On Cooking:

I started Sugarlaws when I started getting into cooking. Everybody gets through life making a couple of dishes pretty well so that they can eat. I had a few of those. But really when I started to get fascinated with cooking and with all the techniques and kind of learning about it, not sort of seeing it as a task that has to get done every day, and more seeing it as sort of a creative outlet, and something that I could learn how to do and a skill that I could pick up, that’s really when I started enjoying cooking.

That’s when I started going to the farmers’ market and going to different food blogs and picking out recipes and thinking about what techniques I wanted to master. I took a bunch of cooking classes. It was really a long learning experience that is well documented on Sugarlaws. I kind of went from here are some cookies with four ingredients to all of a sudden I’m piping my own eclairs and rendering duck fat.

Now it’s funny because cooking is still obviously a huge part of our lives but now what I gravitate towards more are easier recipes that can be healthy and manageable for our family. We’ve obviously got a lot on our hands with an eight-month-old and both my husband and I work. So now it’s kind of taken its own little turn but I still really enjoy it.

On Cooking as a Parent:

I cook very differently because we used to order out and go out. We could certainly go out on a much more frequent basis and now we don’t.

Now it tends to be a lot more meals that I prepare at home. I find two things. One, is that I have to be a lot more organized about it. It can’t be like, “Oh, I bought two things for a recipe and then I’m missing the other four ingredients,” because then we have no dinner. So that doesn’t work very well. And then also I really strive for recipes that can just be our staples, something that isn’t necessarily learning a new technique all the time but is just like, I know how to make this. I know it will be good.

I love our slow cooker. It’s the lifesaver for a new parent.

Because nothing burns. I definitely kind of experiment still with recipes. I’ll work one into the rotation and see if it works and make it a few times. Then, if it sticks around, then it becomes sort of part of our repertoire and one of the staples. But it definitely has changed a lot.

I definitely gravitate towards healthy but easy and low maintenance, and something that is not going to burn.

On a Dish that’s Good for Parents:

I have two that are kind of go-to’s a lot, and they’re both slow cooker recipes. I just find that those are just life savers. One of them is barbecue chicken. I’m so obsessed with the recipe that I literally have it going downstairs in our slow cooker for dinner tonight.

It’s the easiest, the recipe’s on the Sugarlaws website but it’s so easy. It’s chicken breasts, barbecue sauce, Worcestershire sauce, Italian dressing and just leave it in the slow cooker for six or eight hours. And then shred it with two forks and put it on a wholewheat bun, and you have a really delicious, incredibly easy dinner that takes, active time, five minutes.

Then I also have a Southwestern stew that’s one of our favorites. It uses black beans and corn and chopped onions. And then a lot of the time I just kind of throw in some taco seasoning. These are really low maintenance recipes but I swear I really do like to cook and can do the fancy stuff too but lately with a baby…

On Her Book Series called Moving Neutral:

I was an English major in college. I’ve always loved to write, loved to read. I read all the time.

I started reading a ton of young adult books and just love them, love the stories, love the pace of them, love that you could pick them up and sort of fall into these characters’ lives. I just found them really, really enjoyable.

After a while I started getting these characters in my head and, you know, it just kind of felt really natural to try to put . . . well I want to say pen to paper but obviously it was fingers to keyboard. And try to tell the story.

I love writing and I think writing fiction is one of the most fun, enjoyable, hair pulling, intense activities that you can challenge yourself to. The discipline that it takes to write a book is just something that I’m glad that I challenged myself to do because I really learned a lot from it.

I would encourage anyone to take that story that they have sitting around in their head and those characters that they think about every once in a while and try to tell their story. I’m so proud of that as an accomplishment.

It is one of the things that I am probably most proud of at least before our child arrived. I loved it.

I think there’s something to be said for sort of staying in your niche, but I always felt like I write about fashion, I write about food, I write about beauty, but foremost I’m a writer.

Not so much foremost, I am a fashionista or a beauty expert or even a cook, I’m really kind of first and foremost a writer.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

I love Martha Stewart so I watch her show a lot. I have a lot of her cookbooks. I think she’s just totally terrific.

What are some food blogs or websites that we have to know about?

I rely on the big ones like Bon Appetit. Cooking Light actually I think has really good recipes. And then a lot of Joy the Baker, I love her blog. Smitten Kitchen obviously is a huge one that I think probably you already know about, I love her blog. Cupcakes and Cashmere is kind of fashion and food but she always has great recipes.

Who do you follow on Pinterest, Instagram or Twitter that make you happy?

So on Instagram in particular I follow a lot of my friends. I follow a lot of bloggers too.

The nice thing about the blogging community is that the ones that I follow that make me the happiest tend to be the people that I actually kind of know in real life, and have gotten to know through various projects.

They feel like my friends in addition to obviously they’re creators of really, really beautiful content. So I always really like it when I know the person and have some connection to them.

What is something all home cooks should have in their pantry?

Maldon sea salt is the biggest one. You never think of it but it actually makes such a huge difference in your recipes. You don’t want to be pouring table salt on to everything.

Name one ingredient you cannot live without?

Cheese. Like probably parmesan cheese. My husband is always like . . . I’m like, “Let’s just put some parmesan cheese in there” and he’s like, “It doesn’t go in everything.” But I disagree, it pretty much goes in everything.

What are a few cookbooks that make your life better?

Back to Martha Stewart. I have a bunch of Martha Stewart cookbooks that I really, really like. I just find that those recipes are kind of foolproof. They really, really work. They always turn out great.

I also have The Art of Simple Food, which I think is kind of, almost less of a cookbook, and more of just kind of a cooking perspective on which I really, really like.

And then I do a lot online. I love my cookbooks and when I have a Saturday I love browsing through them. But I also, when I’m looking for a recipe, I also look a lot online.

What song or album just makes you want to cook?

I love the 60s and the music of the 60s. So I put on Bob Dylan or Crosby, Stills and Nash or the Beatles. Those are just the songs that sort of speak to my soul, and those are always kind of the immediate go-to songs.
