This American Bite

Since starting This American Bite, Yosef has evolved into a Kansas City based kosher food blogger. On his blog is where he welcomes us into his kitchen, where he highlights flavor when cooking from scratch, seasoning a plate, and breaking bread. Yosef believes that though it is not always easy to express gratitude in person, a home cooked meal says it all.

On Being Kosher:

My wife and I are Jewish, and we keep a kosher home. I didn’t really start off to be a kosher blogger in that niche, but inherently my recipes are kosher, and that means that we don’t mix dairy products with meat products. It means our meat is all certified kosher and I’m personally gluten-free and dairy-free completely. So there’s just a lot of synergy with kosher cooking when you’re already doing a dairy-free diet.

I’ve been eating kosher most of my life. I think about since four or five years old, we’ve been keeping kosher in my family.

One of the big no-no’s is mixing the dairy and the meat product. So there’s no biscuits and gravy if there’s butter involved. So I’ll cook with a lot of dairy alternatives. Kosher slaughter has a lot of rules around how the animals are treated while they’re alive and while they’re being slaughtered, as well as there being restrictions on which meat products we eat, and which fish we eat. There’s also humane treatment of the animals as well. So pork is out of the question, and a lot of shellfish is out of the question, lobster, things like that we don’t eat at all. But, I think there’s a lot of traditional brisket and roast chicken on Friday night for the Sabbath. So we don’t go hungry, I’ll tell you that.

I tend not to get overwhelmed with kosher. Produce, fruit, vegetables, beans, legumes, rice, that’s generally kosher. Fish and meat, primarily meat and chicken, there’s a certification. But in the United States it’s very easy. Most Trader Joe’s you’ll go into will carry kosher chicken, maybe kosher meat, depending on what region you’re in. And if you’ve ever been in a store and seen a little symbol, which is a “U” with a circle around it, that’s the kosher symbol.

On the Food Culture in Kansas City:

Kansas City has an awesome food culture. There’s a lady called Jill Silva who writes for the Kansas City Star. And their food blog actually just won a national award for their coverage of the local food scene.

Our kosher barbecue festival brings people in every year from as far as New York, LA. We have the entire country covered. I have a very good friend from Northern California who isn’t Jewish, doesn’t keep kosher, and he flew in to be on my team. Friends of mine from Israel flew in and are on a team with us, and it’s such a culinary adventure. We’re very lucky that Simon Majumdar from the Food Network comes out every year to our barbecue festival, and he either emcees it or judges it. And if you read his book — I think it’s called Fed, White and Blue — he actually talked about a Friday night dinner that he had in our home, and then the weekend of the barbecue festival.

On Competing in the Barbecue Festival:

My goal at the barbecue festival really isn’t to win. We’re there to have a great time, and my teammates and I have really embodied that. You’re competing in an official Barbecue Society sanctioned competition, and they’re looking for something specific. They’re looking for the smoke rings. They’re looking for the flavor, the texture. And then you kind of got this rogue team brining turkeys. So our competition has a brisket round, a ribs round. I think it’s brisket, ribs, chicken, turkey; obviously no pork because it’s a kosher barbecue festival. To follow the laws of kosher, everyone’s meat is provided for them, which is very atypical.

Everyone has the same supplies. Everyone has the same ingredients list that you can request from. Everyone has the same smokers, same gloves. We have non-Jewish teams, non-kosher teams that participate, and it really does level up that playing field a lot. And the first year I competed, my buddy Chris and I made a terrible brisket. We fell asleep as the water pan ran out. It was disastrous. It wasn’t even good for jerky. And you know, we got better year on year.

Some of what I’ve learned from barbecue, I now apply in the home kitchen; the low and slow technique, using a dry rub, covering your meat. You can do that in an oven winter or summer.

Which food shows or cooking shows do you watch?

I love Chopped. I love the movie Chef and Burnt, and I really miss Iron Chef America.

What are some food blogs or food websites we have to know about?

I’m a big fan of Food52, Amy Kritzer of What Jew Wanna Eat, I think she’s been on your show; Liz Rueven of Kosher Like Me. And two others that I really admire are Chanie Apfelbaum of Busy in Brooklyn, and Melinda Strauss of Kitchen Tested. And all those people I consider are friends of mine. They’re awesome people. Whitney Fisch of Jewhungry. Jewhungry the blog is an awesome blog, and her writing style is so cool, so much fun, and Jonathan Margolin of Toque & Scalpel. His photography is outstanding. I’m jealous of his photography skills.

Who do you follow on Pinterest, Instagram, Facebook or Snapchat that make you happy?

I know I have specific people on Instagram that I love, but I love exploring the hashtags on Instagram, and discovering other people cooking like me, who, you know…after I hashtag my own photo, I’ll go look at who else is using that hashtag.

What is the most unusual or treasured item in your kitchen?

My wife bought me this beautiful wine rack made out of an old wine barrel. And it’s just this beautiful arch cut out of a wine barrel. It’s the centrepiece of our table all the time. I love it.

Name one ingredient you used to dislike but now you love.

Cilantro.

What are a few cookbooks that make your life better?

I mentioned Culinary Artistry before.

(Ottolenghi) I love his work. I also love that he’s an Israeli author, but he’s not exclusively kosher. I have hundreds of cookbooks.

What song or album just makes you want to cook?

The soundtrack to Chef, and not to sound cliche but that movie and that soundtrack it’s on my Spotify, and it’s on Netflix all the time. It’s a great vibe, great upbeat, awesome music.

On a Dish That’s Special to Her:

I would go back to that zucchini bread recipe that I was talking about because it is my grandma’s recipe and my mom grew up eating it and then I grew up eating it. Even my mom, who, like I said, isn’t a big cook, isn’t a home baker, isn’t a home cook, it’s one of those things that even neighbors growing up and my best friend’s moms and everybody would get so excited when my mom would bring over a loaf of zucchini bread.

It really is the first baking memory from scratch that I have. You have to grate all the zucchini – that would be my job. Then my mom would let me pour in the oil and do all the stirring. It doesn’t require a mixer. It’s a really simple quick bread. But it does have a lot of memories attached to it for me as well.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

I don’t have cable. My boyfriend and I recently cut the cord and we don’t have a cable service, so I don’t watch a ton of food TV, but I do watch a couple food shows on Netflix. The Great British Baking Show is on Netflix now, and I’m still on season 1, but it’s absolutely adorable and I’m kind of obsessed with it. Everybody is so happy and supportive of one another, and they make really amazing things and you learn so much from it.

Sometimes while my boyfriend and I cook dinner, we watch Chopped reruns. It’s kind of an inspiration while we’re trying to make something out of what’s in the refrigerator. So we’ll do that. And my favorite thing that I rave about to anybody who will listen, is Chef’s Table on Netflix. The six-part series documentary is about some of the best chefs in the world. The cinematography is just so stunning. I’ve probably watched each of the episodes three to four times; I love it.

What are some food blogs or food websites we have to know about?

I follow like 200-plus blogs. There are so many inspiring bloggers out there. A couple of my go-to’s that I will check every once in a while if I’m in need of inspiration or just want to see what these girls are up to, I love Hummingbird High, Michelle Lopez.

Two Red Bowls, which is Cynthia. She makes these amazing beautiful dishes. And then My Name is Yeh. She’s Molly Yeh of North Dakota. She makes the most fun, just happy type of desserts, so she’s really an inspiration too.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

Some of my favorite Instagramers are probably @ladyandpups. Her stuff is absolutely beautiful. Again, a lot of Asian inspired food but her photography is just really stunning. Beth Kirby of @local_milk. She’s kind of just exploded in the last few years. I can’t even understand how she can take such beautiful photos. They’re just absolutely stunning. And then I guess probably Eva Kosmas Flores from Adventures In Cooking, who I know that you’ve also had on the podcast. Her stuff’s beautiful as well. I love how moody and Pacific Northwestern it is. The lighting is just absolutely stunning.

What is the most unusual or treasured item in your kitchen?

Does a couch count? I feel like my living room and kitchen are just basically like one big room. I don’t really have anything super unusual. I would say my most treasured items would be I have this antique teal-blue Pyrex bowl that belonged to my great-aunt Aggie who lived to be 102. So I have that, and I’m like, “Don’t touch it.” My boyfriend tries to use it to cook in and I’m like, “Don’t! If you break it, I’ll die.” Probably also my KitchenAid mixer. As a baker, your KitchenAid mixer is your best friend.

Name one ingredient you used to dislike but now you love.

This doesn’t necessarily apply to baking as much, but I used to hate, despise broccoli, and now I love it. I eat it everyday. It’s my favorite vegetable.

What are a few cookbooks that make your life better?

Well, like I said, I don’t have a lot of room for cookbooks. My collection is pretty slim currently, but the, Baking: From My Home To Yours by Dorie Greenspan is probably my favorite baking staple.

I also have this cookbook called, Vintage Cakes by Julie Richardson. She apparently found a box of old vintage recipes in the attic of a bakery that she bought or something like that, and tweaked them to make them a little bit more modern and created this vintage cakes book out of it, which kind of goes with the scheme of me really loving these simple, really rustic skillet cakes. A lot of the stuff in there is along those lines, and everything I’ve made from it has been totally spot on. So I actually really love that one too. I’ve been baking from it a lot lately.

What song or album just makes you want to cook?

Probably anything shamelessly poppy. I have a wide variety of likes when it comes to music, but when I’m baking, I want to dance around and have a good time in the kitchen. So, probably Taylor Swift’s, 1989. I think when that album came out, for the next three months, that was the only thing I listened to while I baked. I find myself listening to a lot of Hall & Oates and old pop music which is a lot of fun. So yeah, anything that I can dance around to and have fun with.

On Learning How to Cook:

There were some things that I just watched Grandma do, like my Grandma made the best loaves of bread. I never rolled them out with her, or kneaded, or anything like that. But I always ate what came from it and it was always the same and it was always so good. I could smell the yeast coming from her oven and things like that. So I think it was definitely a little bit of both. Some watching, some helping. With my other Grandma, she makes lefse every year, which is a Norwegian specialty, and I did help her, from rolling the balls to then putting it on the hot iron to getting it real thin, all of those little things, I did do with her.

It wasn’t really until about six years ago, I was living in Wisconsin and I moved back to Minnesota because I did grow up here. But moving into the Twin Cities, there were so many more farmers markets, so much more of a farm to table movement and just interesting food. I had never really taken the time to learn about or experience and so, I had this thing where I’d go to the market and every time, I would pick a new fruit or a new vegetable or even a cut of meat that I had never cooked with before. And I said, “We’re going to experiment. There is no judgment here. Just let the creativity flow,” and that is really kind of how my blog started too. It really forged this passion for telling the real story behind real food and real food recipes and it never gets boring. Because there is always something new to learn.

On Her Food Heroes:

There is so much inspiration that we are so fortunate to have because of the Internet. Years ago, it was just cookbooks which I still am inspired by today. But there is so much content out there and beautiful work being done all across the world. It’s eye opening every single day, and so when I think of my own cooking and who has inspired it a lot, I think of some of my favorite blogs like Lindsey of Dolly and Oatmeal, and Sherrie from With Food and Love, and Sarah Kieffer from The Vanilla Bean Blog.The way she is with baking and her precision and her beauty, you can’t look at it and not be inspired.

And then I think, even just typical sites like The Kitchn and Food52 have, whether it’s new ways of doing things or new ingredients that they are coming up with ideas for, and just the way that they look at food really inspires me.

I also have to say too, like even traditional people, I mean, I think Martha Stewart is phenomenal and she has gone through how many decades and not only evolved with but kept her brand. I only wish that I could throw a dinner party like her. Every little touch she does is really something special. And she takes the time to do it. I think that that’s part of what I love too and the change in me is that, cooking is an experience and I wrote about this on my blog. It’s much more than just for your health or for just putting it on the table. It evokes emotion, it can change mood, it can bring conversation. It’s just a beautiful thing.

On How Her Gluten Allergy Impacted Her Cooking:

So I have had quite a few autoimmune issues since I was young and still kind of battle it. But we finally figured out that one of the main stressors and causes was an intolerance to gluten. It was causing severe headaches and rashes and different things like shingles that I got when I was in eighth grade. I mean just very odd things, and finally, one doctor suggested that I stop eating gluten and it was basically like a miracle. Within three weeks, I was much, much better.

And at first, it was daunting. It was like, “What? You’re telling me I have to give up all of these foods that I love and I have to kind of relearn how to cook? How am I going to eat out?” All that type of stuff. And I can say today, that I would not probably be here sitting and talking to you if that had not happened, because what it did was inspire me to say, “Okay, here is what I can have. Let’s embrace this,” and what happened was it opened my eyes to all these new foods that I had never tasted or nothing that I grew up with, whether it be gluten-free grains like millet and sorghum, or teaching myself how to make flat bread that’s made from chickpea flour known as socca.

And to really too start to look at different cultures because, a lot of other cultures don’t use as much wheat or they use it in different ways, and so there are a lot of cultural things too that really were like, “Wow, this is good. I’ve been missing this for all these years?” And what I also started to realize was that most real food, that’s grown from the ground, plants, lean proteins and meats that are grown in a humane way, fruits, nuts, seeds, all those things are naturally gluten-free anyways.

It’s most of the processed food where the problem comes in. It made me feel good to get that burst of energy in the kitchen. And I wanted to share that with other people. Because as I was going along, I was meeting all these farmers or these artisans that were doing this really cool stuff that it didn’t matter if you were gluten-free or not. It was just really good stuff.

On Some Good Sources for Learning How to Cook with a Gluten Allergy:

It’s funny you ask that, because I had someone message me the other day. Their friend had just found that she was gluten-free. She was like, “Where do they start? How did that work?” And my first resource and still someone that I truly love and really think is such a benefit for the gluten-free community is Shauna from Gluten Free Girl, and her and her husband started a blog before gluten-free had really even been talked about. He was a chef and I read her book which was called, Gluten-Free Girl. It was more of almost a documentary but then also education on her whole transition, and it made me feel so much better. Like, “Okay, my world is not coming to an end. A, I feel so much better and now there is this whole new world of food that I get to explore,” and that was super, super helpful for me.

The other one, I don’t know if she blogs anymore. But her site is still very active. But Gluten-Free Goddess. There are so many beginner, basic recipes that will make you feel less intimidated, and that was really powerful for me too.

On Her Book, Smitten with Squash:

Smitten with Squash was published in July of last year. I was approached by the publisher who, they kind of do these, one book a year basically on a Midwestern fruit or vegetables that you love or that you’re very passionate about and the growing of it and history, because it is a historical publisher that publishes the cookbook. It’s the Minnesota Historical Society Press. They contacted me and were like, “You know, give us a few of your ideas, write a proposal around it. We’ve got a few others in mind.”

And I had always liked squash but what was interesting to me about squash, a couple of things is that, living here in Minnesota, our growing season is rather short. And squash, the family of squash between winter squash and summer squash, you can eat locally almost all year round here. Because summer squash is so abundant and then winter squash, you can store it for up to six months, and that will last you almost until summer squash is starting to arrive again. I thought that that was really neat because I do try to base my recipes off seasonal eating, because I feel like that’s when food tastes the best and you can become creative with what looks good at the market and things like that.

The other part that was really cool to me was that squash really is a part of every culture in one way or another and there aren’t very many foods that are like that. And so I just started formulating this idea about doing my whole book on squash and they accepted the idea.

There is 80 original recipes. There are about 40 summer squash recipes and then 40 winter squash recipes. And you’ll see everything from sweets to appetizers to pickles to main dishes, vegetarian to Paleo to kind of everything in there because it is so versatile.

The other real passion behind it is, you know how there are those foods that you had when you were young and you think like, “Oh my gosh, I do not like this because, this is probably the only way you can make it or this is the way I always see it served and I can’t stand this.” And when people talk about it, they are like, “Oh, yeah, well my mom made it, acorn squash. She baked it in a pan with some water and then when it came out she put butter and brown sugar on it. It’s just not good.” And I wanted to change that. I wanted to give people new ideas for what to do with summer squash in stuff like brownies or cake or things like that.

What are some food blogs or food websites we have to know about?

Well, the ones that I mentioned before. So The Vanilla Bean Blog, Dolly and Oatmeal, With Food and Love, Sara from Cake Over Steak has such an interesting food blog that has beautiful recipes but she also illustrates her recipes, and I know she’s been on your show, and she is fantastic.

If you’re looking for a wonderful vegan site, Abby from The Frosted Vegan has just a great way with words and she is one of those people that makes things very easy to understand. I love too, if you’ve never glanced over the blog, Green Kitchen Stories, just beautiful photography and wonderful, nourishing, healthy food that never loses flavor and is exactly what I love to do, which is cooking seasonally.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

Well, on Instagram, I love following The Fauxmartha. She has her little girl that she posts pictures of, but her food scenes are just so incredible and simple yet they just make me want to start cooking. That is something that is obviously what we all aspire to do. Another friend, her blog, it’s called Sunshine and Sea Salt. And she is just a real good friend and is an amazing recipe developer as well, but her words that she writes on Instagram are almost like sometimes blog posts. They are just beautiful. Oh, Ladycakes too is a really fun one to follow along with, and I love following her. Those are a few of my biggest inspirations.

What is the most unusual or treasured item in your kitchen?

My most treasured, the one that I use the most that like, if you could only keep three things from your kitchen, would be my Le Creuset dutch oven because they are just workhorses. They do everything that you could ever want, and then I used to think it was strange that my mom gave me my grandma’s silverware and now, I love it and I use it in so many of my photographs, and it really means a lot to me when I see it. And then, thirdly, are some of my thrift finds that I find while I’m out. One of those is this real old baker’s scale. You’ll see it in a couple of my posts and on my Instagram but they just don’t make things like that anymore.

Name one ingredient you used to dislike but now you love.

Ricotta cheese. I used to not like the texture. I only really had it in lasagna and I prefer cottage cheese over it in lasagna and that’s what formulated this dislike. Now, I think it is so great whether that’s baked with lemon and olive oil and herbs for an easy appetizer, or on salads. My favorite thing too is to put it into desserts where typically, you might use yogurt or something like that. It creates such a soft texture and moist, rich, just kind of like cake and it’s really a fabulous ingredient. But I thought I hated it. Now, I love it.

What are a few cookbooks that make your life better?

Deborah Madison’s Vegetable Literacy is, I mean, that should definitely be in your kitchen because it’s all about cooking with families of plants and how they all go together. It’s just really simple but interesting recipes and I use that as not only a reference guide but something every week in my kitchen.

Another one that I think you just should have it is Joy of Cooking, because every single technique or question you ever had about food is in there. There are also vintage recipes and modern new ways of doing things which I think is really cool.

One of my newest cookbooks that I use a lot and that I love is Sheet Pan Suppers and it’s all different recipes and it’s not just suppers but things that you can make on a sheet pan and have so little clean up. Very little clean up, like a sheet pan is just another workhorse too. And it creates delicious meals.

What song or album just makes you want to cook?

I wouldn’t say it’s any particular album or anything, but 50s and 60s music, some of those classic kind of blues but like, pop hits too. They’re all so upbeat and all have such a happy tone. They don’t make you think too hard and that’s kind of what I always have on in my kitchen.

On Gimme Some Oven, Ali creates fresh, creative, quick and easy recipes for sharing, and does all the photo taking, recipe creating, food styling and taste tasting for her blog. Apart from her recipes, Ali shares plenty of beauty, craft, fashion and gift DIYs, as well as music and movies just to mention a few other things she writes about.

On Her Blog:

I began the blog about six years ago back in 2009, and I began it just totally as a hobby, for fun. At the time, I was definitely in the process of still teaching myself how to cook and a bunch of my friends did not cook. So it was the sort of thing where I’d go to a party and people are always asking for recipes. So once I stumbled upon the idea and format of a blog, I decided it would be a great way to just organize my recipes and be able to share them with a half dozen friends. It ended up growing from there, but it began just totally as a fun, creative outlet and a place to just help myself organize recipes.

I was actually a musician prior to this.

I worked at a church for many years leading music and then I also taught music lessons on the side. So cooking was just a total hobby. I knew nothing about photography, and I’ve always enjoyed writing and reading. But no, I had zero experience in just about all of the major aspects of blogging especially the tech side. I knew nothing about how to create a website or any of that. But it’s been a fun thing to learn.

On Honing Her Skills:

Back in the day before there were just a ton of food bloggers on the scene and so many resources out there, I did a lot of Googling. I did a lot of research the old fashion way by talking to photographers or talking to writers or people who were much better cooks than I was, just trying to have them actually teach me one on one. But now, I can go to YouTube for any of that. I think I’m naturally somebody who loves to learn and teach myself things. So it was fun to be able to begin in all of these things like begin as a very amateur photographer and see where I needed to go and slowly inch my way there towards taking photos that I felt okay with.

It’s been step-by-step, like beginning photos on my blog, to beginning recipes, even beginning writing. I think most food bloggers look back on where they began and have a little bit of a cringe moment. On the other hand, I try and see it as progress. Any time that I get down on myself where I feel like I am not as good as I would like to be, I can always look back to some of those first years especially and be like, “Oh yeah, don’t forget, you’ve come a long way.”

On Her Curiosity Around Food and Cooking:

I think more than anything, I love to eat but also even more than that, I’ve always been just fascinated by the idea of what happens when people share a meal together. That life around the table. I feel like it’s such a special way that people connect in something that’s so fun and nourishing. Food has always been a very social thing for me, not that every meal is social but those are the meals that I’m really inspired to cook. And any time that you can have good people around and have good conversations, I’m all for any of that. Even back in the day, that was my main motivation, just to teach myself how I could cook a healthy meal.

On Learning How to Cook:

By trial and error. My mom is a fantastic cook, and she cooked really well balanced and pretty healthy meals for us growing up. Almost every night, we had dinner on the table and we sat around together, but she was also one of those moms that, for whatever reason, never really made me help her that much. So, somehow, I got to college and I knew a little bit but not much. And by the time I was introduced to cafeteria food and quickly realized how good I had had it, I also realized I didn’t know how to cook any of my mom’s special dishes.

And so it was definitely in college when I had my first apartment with a kitchen that I started just experimenting and figuring out how to make some of the basics. But then, from there, especially in my 20s, I just really enjoyed the process of following a recipe. With recipes, most of the time, they work. There are the occasional duds, but I felt like it was a pretty successful experiment learning to cook. Most of the time, things turned out the way I had hoped and so I really enjoyed it.

On Deciding on What to Cook for Her Blog:

A lot of the recipes on there are random cravings or foods that I wanted to learn how to make just personally. But as time has gone on, a lot of it is definitely geared much more towards my readers, and I keep a running log of the different requests that they make. We’ve had literally hundreds of requests now for a crock pot potato soup. Apparently, everybody loves potato soup, but they really want to know how to make it in a crock pot. So today, that was a recipe that was an example. I have a stove top potato soup that I love, but they really wanted a crockpot version.

So yeah, trying to find a good mix of things that different people want to eat and even with the different diets and such, that kind of goes back to my love of entertaining, too. I feel like whenever I have people over, I have lots of friends who are vegan or gluten-free or have different food intolerances. And I’ve always said that my blog is never going to be a niched diet blog. It will never be all gluten-free. But, I totally want to make sure that there are recipes on there that different people can enjoy completely.

On Her Food Heroes:

I’m actually that one weird food blogger who hardly ever watches food TV. I’ve never had cable, and I occasionally catch things on YouTube. But I think for sure, Rachael Ray was probably the first person, her 30 Minute Meals. That’s just how I cook, and I love that she is one of those pioneers in the industry who’s made cooking really approachable and easy and geared toward families. Just being able to make it possible to get a healthy and well-balanced meal on the table quickly. I am a big fan of hers. I saw her. She came through Kansas City, where I live, and did a book tour like a year or two ago, and I heard her speak. And I was like, “Man, the girl knows what she’s doing.” She was really impressive and I think, more than anything, I realize how hard she’s worked at her career and so I really respect her.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

Honestly, probably the only one that I watch regularly is Chopped. I really like Chopped.

What are some food blogs or food websites we have to know about?

One of my best friends in Kansas City is Cookie and Kate who I believe was actually on your podcast before. Kate from Cookie and Kate, she has a fantastic vegetarian blog. For a vegan, I highly recommend Minimalist Baker. John and Dana are just fantastic, talented cooks.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

On Instagram, I am a big fan of Pumpkin the Raccoon. I don’t know if anybody follows Pumpkin. It’s literally a pet raccoon. It’s just the absolute cutest. I am also a big fan of the Two Sisters Angie on Instagram, which is also under the hashtag fashionbymayhem. It’s this really sweet little girl who makes these super creative dresses out of paper. It’s just a fascinating account. Other than that, there’s just a zillion food accounts out there that I also love to follow for inspiration.

What is the most unusual or treasured item in your kitchen?

I have a pretty normal kitchen. I do have a dehydrator that was my Christmas gift from Santa when I was 16 years old. I’ve always had a long obsession with beef jerky. So even as I’ve lived in teeny tiny kitchens, I’ve always made room for my little dehydrator which takes up more space than it should.

Name one ingredient you used to dislike but now you love.

Brussel sprouts. I am obsessed. I feel like they were given such a bad rap when we were young. They were always boiled or something super boring. They are so good roasted.

What are a few cookbooks that make your life better?

Anything from America’s Test Kitchen. I am 32, so I feel like I’ve been through a zillion weddings in the last decade of life, and I give America’s Test Kitchen’s New Best Recipe Book to all my friends who get married because I feel like it will never fail, and I love the research behind their recipes. They have a cooking for two. Yeah, anything of theirs, I just 100% recommend.

What song or album just makes you want to cook?

I have music on all the time when I cook. I mean, we’re always happy. Cooking makes me happy. So I feel like, any song that makes me want to dance in the kitchen, that’s always a plus. But currently, Adele’s new album is on full-time.

On Cooking as a New Parent:

It’s definitely driven a little bit more by convenience. I used to just cook whatever I wanted, whenever I wanted, and now, a lot of what we are doing in the house is meals, particularly dinners, where you can prep a lot of things in advance a little bit here and there throughout the day. I can prep a little bit during the first nap. I can prep a little bit during the second nap. And then by the time she goes to sleep, and we’re having dinner at night, there’s very little that’s required to bring it together, and we can still eat at a reasonable hour.

A lot of that is relying on things like a slow cooker, or, I use my rice cooker for everything. I’m cooking a lot of things in the broiler. I didn’t used to do that a bunch, but it’s such a fast way to cook protein. So that’s changed my game a little.

And my husband’s a great sport about the fact that we eat the same three or four meals in rotation, which we did not used to do. It used to be something different every night. We just have go-to’s that we know we can pull off in a moment’s notice. So there’s a lot of that, but still trying to keep things interesting.

I wasn’t such a really big proponent of the slow cooker actually before I had Lana. I know a lot of people are super hardcore slow cooker fans. I guess I just didn’t really give it a chance. I thought, “Oh, it’s for everything. Let it go…Whatever. I can do the same thing on my stove,” but it is really nice to be able to start something in the morning and then be able to leave the house and run errands or whatever and come back. I use my rice cooker for oatmeal which makes breakfast a no-brainer. So one of us can get up in the morning and start the oatmeal.

When we first had Lana, when she was a newborn, one of us would sneak out of bed before she would wake up in the morning, because she sleeps in our room, and put out all the oatmeal toppings and the ingredients and everything and set it. And then by the time she was up, it was ready to go. So we wouldn’t have to worry about making breakfast for ourselves. So yeah, I use that. I even hard-boil eggs in my rice cooker.

It’s pretty incredible. If you have a steamer insert, you just throw the eggs on top while you cook the rice. The time the rice is done, your eggs are done, and it’s perfect. If you want soft-boiled eggs, you can do it when you cook your white rice. And if you want hardboiled eggs, you do it when you cook your brown rice.

On Putting a Meal Together Quickly:

I mentioned that I like to use the broiler a lot. So I marinate a protein throughout the day. And then I can just pop it in the broiler when Lana’s napping or goes down for the night. And it usually just takes ten minutes to cook a protein that way.

I have a couple recipes on my blog. One is the shoyu chicken, and that’s super easy. It’s just chicken thighs that you marinate, and broil, and serve it with white rice or whatever side you want. And then the other one is a pumpkin curry which takes a little bit longer to do, but again, it’s something where I can do different elements throughout the day. And then it’s topped with a crispy, spice crusted tofu, and that is done completely under the broiler.

And even if you just look at the recipe for the tofu element, we put that tofu on salads. Sometimes, I just have it in a bowl with roasted veggies. So even if you’re not into curry or you’re not doing the pumpkin curry part of it, the tofu is super clutch. We do that all the time.

On How to Make Cooking Fun:

This is a cop out, but when we had Lana at first, we did a lot of the grocery meal delivery kits that are popular right now. I know that there’s Sun Basket, and there’s HelloFresh. And I know a lot of different ones that folks do. Some are organic, some are not. And that’s something that I probably never would have considered doing before I had kids. But it’s fun because they have the instructions written out so clearly step-by-step with those meal kits that it’s super easy for two people to tag team a recipe. You can just say, “Here’s where I started,” or “I left off at this step.”

Unlike some recipes, traditional recipes, including the ones that I write, a lot of times, the items that you have to prepare are called out in a different color or something like that, so you can see exactly what you need to do to this fruit or to this vegetable before it goes to the cooking stage. And you can break up the responsibilities that way.

We found those actually really helpful because it was a fast way to still be cooking together in the kitchen, something that was homemade. But A, you don’t have to go to the grocery store and B, just the way that the recipe is written, it’s really easy to do it on your own. But if you’re moving around the kitchen with multiple folks or something like that, it’s easy to make that come together.

The other thing that’s fun is we don’t go out a lot for dinner anymore. So when we’re feeling not super inspired, we’ll invite people over to just have hors d’ oeuvres here or something like that. And that’s a good way to get engaged about cooking again. You don’t feel like, “Oh my gosh, I’m just making dinner for myself to get by.” You feel like you’re entertaining which is a refreshing way to feel when you don’t get a lot of fun evening time. So that’s something that’s invigorated my time in the kitchen.

On Her Food Heroes:

Well, aside from my family, so my mom first and foremost, I learned so much from her just growing up in the kitchen, and her dad like I mentioned, just having exposure to that at a young age, and my dad as well.

In terms of people that inspired me, I guess if you think about the Nigella’s or Ina Garten, those types of folks even before Food Network was anywhere near where it is today, those were the types of folks where I just really admire. They’re cooking super un-fussy food that’s just delicious. It just tastes good. They don’t necessarily have a hook or a theme. They just make food that’s accessible and super tasty. And they deliver it in such a seductive and enticing way without really trying.

And I know that now, they’re these big brands, and they’ve got marketing up the wahoo. But back in the day of Yan Can Cook or The Frugal Gourmet, I used to watch those folks on PBS, and those were just people that cooked food that they knew they would enjoy. There wasn’t really any big spin to it.

Those are the types of folks that I think I learned the most from, just seeing their passion and seeing how that can translate into something that’s educational and entertaining. I also had a really unabashed girl crush on Giada when I was in college to the point where I would have dreams that we were best friends hanging out in Santa Monica. It was super creepy.

On Her Blog:

I had sat down with one of my good friends, and we were doing this life mapping of everything that we wanted to do in the next several years. And I told her that starting a blog was something that I really wanted to do, and I started The Pig & Quill without doing a lot of research, without coming up with a big plan for a brand or an image or even an idea of how the site would look.

It was just like I told her, “This is what I want to do.” We brainstormed a bunch of names. I bought the domain name, and then I sat on it for six months. And then it was bugging me that I had spent $13 to register this domain name and hadn’t done anything with it.

So Labor Day weekend of 2012, we actually stayed home that weekend, it was a stay-cation, and I was like, “Okay, this is the weekend that I’m going to start the blog,” and I launched it without a lot of research or anything. The images were awful, but it was exactly what I wanted it to be. It was just me talking about the food that I liked but also talking about how food fit into my life and adding a personal storyline to each post.

So yeah, it wasn’t really like, “Oh my gosh. I have this vision that I’m going to be a food blogger.” It was just something that I did spontaneously, and I’ve had to learn the ropes as I’ve gone along. Fortunately, there’s a ton of inspiration out there these days to help me grow, but it’s a crazy space, food blogging, because there’s so much opportunity and so many different angles and approaches that you can take with your blog. And I went into it with, like I said, with a really unclear vision. I was just like, “I’m going to get this up today.” And hindsight being 20-20, I would have mapped out my look and my voice a little more before I started, but finding my way has been part of the fun.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

I watch Master Chef Jr. When I’m over at my in-laws or my mom’s house, I watch Chopped. That’s always fun. Sometimes, we pause it and say what we would do with the ingredients if we were given the basket. I don’t watch a lot food TV anymore these days.

What are some food blogs or food websites we have to know about?

Oh, wow. There are a lot. I really love i am a food blog. Everything that Stephanie makes I want to eat it immediately. Two Red Bowls, the photography is ridiculous, Fix Feast Flair, Kale & Caramel. I’ve only been reading Kale & Caramel in the last, probably, six months, but her voice is…I feel like I just want to be friends with Lily in real life. She cracks me up, and she does a really good job of doing what I really like doing in food blogs, which is pairing a little bit more of personal anecdotes with recipes. She does a lot of that.

Bev Cooks was one of the first food blogs that I read back in the day. She is hilarious. And she has two kiddos. They’re twins, and they’re the most adorable people ever. Her Instagram is just ridiculous. Wit & Vinegar, Billy’s really funny. I think his aesthetic is really different from anything that anyone else is doing.

I really like reading Dessert for Two because Christina’s got a little one that is Lana’s age. So it’s been fun reading her blog and seeing her daughter at the same stage that Lana’s at. We were pregnant at the same time. We’re not BFF’s or anything, but I stalked her throughout our pregnancies, and that was really fun.

Chocolate and Marrow, I really like Chocolate and Marrow. Brooke just does crazy, creative stuff, really, really delicious things, really indulgent and just beautiful stuff.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

Snapchat, I just haven’t really gotten into yet. I would say of those things, I probably use Instagram the most. Violet Tinder, she’s really great. She has just a super rainbow-hued, really fun Instagram. And she does a lot of candy-colored things and water colors, and everything is just super poppy, neon bright. Miss New Foodie is really funny. She has some pretty funny captions for all of her indulgent eats.

What is the most unusual or treasured item in your kitchen?

The thing that’s most treasured in my current kitchen is not even mine because I rent, but it’s our stove. We have a vintage Wedgewood stove in this kitchen that’s incredible. It’s really petite. The oven portion is really petite, but it heats up super-fast and evenly. It’s got a legit broiler which I mentioned earlier that really gets the job done.

In terms of an appliance, I have a garlic press, the same garlic press that I mentioned earlier where I think it’s called the Garlic Twist. It’s like this big piece of acrylic. And rather than crushing garlic through it, you put the garlic in, and you twist it. And because it’s one piece of plastic, it rinses out super easily. I use it probably every day. It’s not like the garlic presses where there’s all the little holes that you have to get all the stuff out of.

Name one ingredient you used to dislike but now you love.

I don’t really love mustard or I didn’t really love mustard, particularly yellow mustard, but I didn’t really use any mustard. And now, maybe because my husband is a huge mustard aficionado, I’ve come around on mustard. I actually really like hot horseradish-y mustards more so than a yellow mustard. But I used to really not be a fan of yellow mustard. I can at least tolerate it now.

What are a few cookbooks that make your life better?

I’m an awful baker, so I have to rely on cookbooks for baking or at least for measurements that I can gain inspiration from, so The Williams-Sonoma baking cookbook is really great. It’s got tons of cool recipes. But it’s also just good for if I need a jumping off point for an idea that I have.

I mentioned i am a food blog earlier, and her book Easy Gourmet is great. I’ve given it to a bunch of people because it’s just exactly what it says, easy gourmet. It’s really accessible. Anything by America’s Test Kitchen is good for the same reason as the Williams-Sonoma baking book. You just know that everything is really thoroughly tested, and it’s a good jumping off point. I still have a subscription to Bon Appétit and Gourmet. I know that that’s not a book, but those are good for keeping me aware of food trends and things like that.

What song or album just makes you want to cook?

Well, I always have this vision that if I ever quit my day job and I got to just spend all day cooking in my kitchen, that I would do it listening to Carole King or Adele on the record player. So I guess I’d say both of those ladies. Then for something maybe a little more poppy, I’ll dance in the kitchen to Britney Spears or Nelly Furtado, early 2000’s Nelly Furtado. The Who, it’s really fun.

Alexe is from a large Italian family where food is the center of everything. She’s been a food lover all her life and plans for meals way too far in advance. On the Role of Food in Her Family:

“A big role” is definitely an understatement. My immediate family, we grew up in Northern Virginia, and my extended family’s in New Jersey. They’re a little louder and crazier. My mother grew up full Italian, and food was the center of everything that we did.

We ate dinner, my sisters and I, every night. My mom cooked every night except Saturday. She and my dad went on dates every Saturday, but it really was just the main thing that brought us all together at the end of the day. We could chat and catch up with each other. She also made breakfast every morning too, so we ended, began, ended our day with her food.

On Her Curiosity Around Cooking:

I have a lot of memories of my sister Brooke. She’s 14 months older than me, so we’re really close but I have memories of her playing out in the cul-de-sac while I was in at around five or four helping my mom get dinner together. So dad was probably around eight or nine. She would let me snap the green beans, the ends off the green beans, and then I graduated to other things like stirring the risotto and helping season the tomato sauce. It was a very gradual process, but it’s always been in my heart for sure.

I think it was just about getting food day to day with four kids, going in four different directions. Things were definitely hectic so she was helm of that, and I would say in my teenage years, I helped out a little more. I also lived at home through college, so that’s when I really was able to take the reins from her a little bit and actually make things for my mom and dad. That gave me a really good taste of how to prepare things on my own and make full complete meals.

On Her Blog:

It started when I got my first full-time job out of school. I was working at a start-up here in D.C. I was also living on my own for the first time, so I really was in control of my kitchen and what I was making every single day, which was something that I never really had experienced. But my colleagues would tease me. I’d go heat up my lunch. I’d have a full plate of a proper starch and vegetable and a meat, and it looked like I just prepared it. They would joke and also ask, “How did you do that? You love to cook. I didn’t know that.”

So that sparked an interest and made me realize a lot of people don’t know how to really cook healthy balanced meals. Some of them, they didn’t grow up with a mom like me cooking every single night of the week. So that was in 2011, and I got a new job in 2013, and I wasn’t feeling very inspired. I would come home at night and watch the Food Network. I also started to read a lot more food blogs during that time period as well, and I realized I have something to share.

So I worked on it for about two months before I posted my first recipe. I went back and forth with the name. I always knew I wanted to fuse music and cooking, so basically it started out of feeling uninspired at the day job.

On How to Make Cooking Fun:

I try to experiment with different spices. I have a subscription to Hatchery, it’s a monthly box subscription that comes, and it’s artisanal ingredients from people who make seasonings to rubs, to barbecue sauces. So that opens my eyes to ingredients that I never had cooked with before.

I love doing that. I think changing up the spices, changing up the vegetables. Sometimes, I get in a rut with every week at the store getting green beans and broccoli and kale, but I started to buy cauliflower a couple of weeks ago, so I was doing a lot with that. I made a soup. I roasted it. I just think making small tweaks can change things drastically.

On Her Music:

I mainly write on the piano, so that definitely lends itself to more ballad-y, maybe blues-y. I also experiment a little bit with the guitar, and my voice is more soulful than you would think. And I love soul and Motown music. So that’s my style, catchy melodies. I love doing it. It’s a great creative outlet.

I grew up on Elton John and Billy Joel and Bruce Springsteen, a lot of classic rock. When I’m writing though, I definitely get influenced by women singer-songwriters. People as old as Carole King to newer people like Sara Bareilles, really anything. I’m getting really into the indie scene now. Spotify really suggests under the radar artists, and I really will listen to anything, and as long as it’s got grit and soul, then I’m in.

On Music and Food:

I definitely think that they complement each other. For me, the ultimate relaxation is coming home—when I’m not too frazzled—coming home from work, I put on music right away, and I usually opt for something a little more mellow and that matches my relaxed state that I get in in the kitchen.

When it comes to entertaining, we actually just had a dinner party for 10 people here, Saturday night. I let my husband make the playlist. He’s really into music as well. But I definitely think you have to know your audience, like who’s coming over, what you’re serving, what the mood is going to be like. We did more of electronic, indie tracks during the dinner party.

Knowing your audience, I think, helps me determine what kind of music. I know when my parents come over, they hate weird electronic or hip hop or rap, so I definitely don’t play that. So I think that’s the best tip. Know who you’re going to be entertaining.

I love listening to Van Morrison, The Eagles, Crosby, Stills, Nash & Young. I like the old stuff, and then I’ll put on Pandora sometimes and let it shuffle through like Alabama Shakes and John Legend and those kind of artists.

On Choosing Between Music and Cooking:

At this point in my life, cooking is playing a bigger role. All through middle school and high school and college, I was really pursuing music very strongly. I made a couple of CDs. I was writing all the time, and I had a ball with it. Everybody knows the music industry is very cutthroat and very difficult. And I wasn’t sure if I had the guts to go full-fledged into it and sacrifice a lot of the things that I loved about my life. Not to say that you can’t have both, but there’s definitely a level of sacrifice I wasn’t sure I was willing to make.

So at this point, I would choose cooking, and the food blog has really opened up my eyes to all the opportunities that are out there. As far as I see it, they’re endless. Especially this day and age, my mom is always like, “You guys have so many opportunities at your fingertips these days.” So I felt a lot of momentum. With the blog, I’ve gotten to do great partnerships with brands. So I feel the results from it much quicker than I ever did with my music.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

I love anything with Bobby Flay. I’m obsessed with Chopped, and I love Giada at Home.

What are some food blogs or food websites we have to know about?

Okay, so there’s one called Feastly, the website is eatfeastly.com and basically, it brings together home cooks like myself. You can post meals and sell basically a seat at your house for people to buy and come experience a dinner with you.

So if you’re looking to experience D.C. in a different way instead of going out to restaurants, come to my home, and I’ll prepare a fresh cooked meal for a much cheaper rate than you would pay going out to a fancy restaurant. So I love that.

I actually hosted my first meal back in the winter. I’m trying to get ramped up again because I think that’ll help grow a local following here in D.C. versus the blog I’d see as more national stuff. But actually bringing people into my home and feeding them live and seeing their reactions, I think that’s where all the magic happens.

I also follow this website. He’s an entrepreneur guy named Gary Vaynerchuk.

He’s crazy, and I love his no-bs attitude, and he’s very motivating. So he helps me if I’m feeling like I’m in a rut, just to keep pushing and gives great tips on how to become the ultimate entrepreneur.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

I would say definitely somebody on Instagram since I spend a lot of my time there. I would say there’s this handle called, A Daily Something. It’s actually a blogger based in Northern Virginia so not too far from here in D.C., and she’d post basically little glimpses of life, and that always makes me feel warm and cozy and happy.

What is the most unusual or treasured item in your kitchen?

It’s like a silver pot that was my great Aunt Connie’s that my mom used to make her sauce in, and she passed it down to me.

A lot of good food was made in that pot.

Name one ingredient you used to dislike but now you love.

I never really cooked a lot of Indian food, so it’s curry. It always smelled weird to me, but I love it now in Thai food and in Indian food.

What are a few cookbooks that make your life better?

Anything with Ina Garten. She has a great one I think it’s 10 or 12 years old. It’s called Make it Ahead, and she just has such a clean simple way of showing you how to entertain and make delicious meals that can feed a lot of people, which is something that I love to do.

What song or album just makes you want to cook?

I would say Tumbleweed Connection by Elton John. Most people my age don’t know it, but it reminds me of my dad and my family and feeling warm and cozy, which are some of the feelings that cooking conjures up for me.

Inspiralized

Ali discovered the spiralizer in March 2013 and since has created Inspiralized, which is a blog, a community, a product, and a book. She lost 30 pounds by eating Inspiralized and she aims to inspire others to always feel their best, in part, by helping turn vegetables into healthy, creative, and satisfying meals. Ali wants to show that eating healthy is fun and doesn’t have to be boring.

I am so pumped to have Ali Maffucci of Inspiralized here on the show today.

On What a Spiralizer Is:

A spiralizer is a small kitchen tool that turns vegetables and fruits into noodles. So, at its most basic level, that’s what it does. And then, what you decide to do with those noodles afterwards is where the fun begins. But it’s just a basic kitchen tool.

My mother is actually a type 1 diabetic. She had gestational diabetes with her pregnancy and it stuck. She was trying raw veganism as a way to help manage her blood sugars. And she discovered zucchini noodles in a restaurant, and then did her own research and discovered the spiralizer; and found out that the spiralizer can make zucchini noodles. She bought one on Amazon and she loved it. And it was really, really helping with her health. And her knowing that I love healthy cooking and I love pasta, she said, “Come over one night. I’ll make you dinner so you can test the spiralizer out.” I was like, “Mom, what is this veggie noodle stuff?” Months later, I went over. It was sort of like a light, Asian vinaigrette on it, just a total raw noodle dish. And I took one bite – and I still remember that bite, it was just like, “Wow, this tastes like pasta.”

I was blown away. I was like, “How have I not heard about this?” So, I asked her that night if I could take her spiralizer. My poor mother was so excited about hers and I took it. That was on a Sunday and the next night was a Monday. I made dinner for my husband and he had the exact same reaction. He was blown away. It was such an easy way to make dinner and I had never used it before, and it just came so naturally. So it’s definitely great for a basic chef. I was blown away, so that’s how I first discovered it. And then obviously, once I got my husband’s approval, that was the big moment.

On Starting Her Blog:

What happened was I found myself in my desk job, sitting there writing recipes on napkins at lunchtime, and typing on my phone things to test out. “So, oh, can I spiralize this?” I was finding that at work I was dreaming of spiralizing, which kind of sounds corny, but it was the truth. I just felt so creative. And I was looking online at night searching spiralizer recipes and resources for spiralizing and there was absolutely nothing. There was no community. There were a couple of recipes. One was a simple pesto recipe in the New York Times and very basic vegan, vegetarian, raw vegan sort of recipes. There was just no community.

I was looking at the hashtag for spiralizer and there was really nothing. So basically, overall, I was so blown away by spiralizing that I wanted to tell everyone about it. And now, it being 2015, the best way to get out there is to launch something online and be on social media. So, I basically walked into my boss’s office one day, after like, two months of trying to build up the courage to quit and start this dream. So I walked into my boss’s office and quit. The next day I went to a Starbucks near my apartment here in Jersey City, and I just started from scratch. I just wanted to build a community. That’s really what I wanted to do at first and build this buzz around spiralizing.

On Being Conscious of What She Eats:

It sounds bad to say, but like any other girl in her early to mid-20s, I was very conscious of my body and being healthy. I think I always grew up with, sort of, healthy intentions, because, as I mentioned, my mother was diabetic. So, a lot of the things we had in the household were diabetic-friendly whether it’s obviously, low sugar, low carb. We always ate whole wheat everything. We weren’t allowed soda. I was just very interested, but I never actually started cooking until my senior year of college when I decided to become a vegan. Veganism was starting to be trendy and I was, like, “You know what, I really need a reboot. Let me try this.”

I was vegan for about two years and ever since then, I would say, “I’m an omnivore now. I eat everything. But I’m an omnivore with a vegan mindset.” I think it really helps you balance everything.

On Her New York Times Best-Selling Book, Inspiralized:

It’s actually a funny story. I self-published the first year that I was starting Inspiralized. I was getting a lot of emails and notes about it and people were asking, “I want a little something to include with the spiralizer I’m gifting to my friend, because of you. Do you have anything, do you have a recipe card I can include, or something like that?” And I was emailing people, “Oh, just print this out.” And I wanted something to hold onto and so people could spread the word that way. So I self-published just a small little cookbook and it was really, really successful and people loved it. People were sharing it over the Holidays. I actually got approached by a publisher who made a publishing offer to me. And I was like, “Wow, this is real. Wow, this is real.” So, I got a literary agent and then she took me on that journey and I finally selected Random House.

That felt like I finally made it. I got a cookbook deal. It’s like every food blogger or foodie’s dream to really have a cookbook. It’s like your first big milestone. I was saving my best recipes I wanted to post my blog, I’m like, “I’m saving it for the book.” But that was just an incredible experience. I learned so much as a cook. I became a better cook. My recipes on my blog are now better because of it. I learned different things about the spiralizer that I incorporate in the book. New vegetables I discovered along the way of writing the book I included.

It was a big discovery and a big proud moment in my life to write that book, and I put everything into it. I wrote it during the summer, so I didn’t go to the beach that year. I just wrote the cookbook, but I’m so proud of it. It’s an amazing book.

On Her First Product, The Inspiralizer:

The Inspiralizer is obviously my own branded product. And I wanted to make something that people could use on a daily basis like I do. So if you really love spiralizing, you’re probably spiralizing like three to four times a week, if not more. I wanted to make something that people could display proudly on their countertops that sort of have that effectiveness where you could use it constantly. You wouldn’t have issues with it; make something more sturdy.

I was spiralizing every single day. The product that I was using, I was noticing, like, “Well, if this was just a little different, and this was that…” So I basically went to the drawing board and sketched my own design for what I imagined to be the perfect spiralizer. I got a business partner, obviously. He  guided me through the process based on my design of what I wanted. And then when it came time to name what it was, obviously, Inspiralizer sounds pretty good.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

I love Chopped. Chopped is great because I always learn about new ingredients and I find that I learn a lot just from the fast thinking that the chefs have to go through. And I love Giada.

What are some food blogs or food websites we have to know about?

I love Molly Yeh. She is out in North Dakota, I think. She’s sort of mostly recipes. Her photography is beautiful. Her cooking methods are really fun. I really love her. And then if we’re thinking about healthy blogs, I love Gina from Skinnytaste. She’s a friend of mine and she just has the most reliably, healthy, tasty recipes.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

I follow a lot of people on Instagram. I like NomYourself. She is a vegan blogger. RobinNYC. She is a spin instructor and a running coach. She started an urban running community, and she has great Instagrams, super motivational, and my favorite way to exercise is spinning. I spin with Peloton Cycle and she’s a head instructor there. All of her images are just very raw and gritty, but she shows her hustle and she shows it out there for people. I’m really inspired by her, especially in a fitness element. She’s an entrepreneur as well, but the fitness element, she always gets me in the gym.

What is the most unusual or treasured item in your kitchen?

I actually have a good one for this. So, my first day of college, my father said, “Oh, you know one of the fun things you can do is have your friends over and watch movies and make popcorn.” And I was like, “Dad, I want to go to parties and have fun. I’m not just going to sit in my dorm and eat popcorn. But, of course, I did. I sat in my dorm room and ate popcorn, and he gave me this bowl. It’s like a ceramic bowl and it has the emblem of the college I went to, Wake Forest. I got it my freshman year of college and I’ve lived in five different apartments since then, and I still have it. And I still use it every single day. Not for popcorn…well, I do use it for popcorn, but I actually use it when I cook, as like a mixing bowl.

Name one ingredient you used to dislike but now you love.

Broccoli rabe. I used to think it was really bitter, but I learned how to cook it and now I love it.

What are a few cookbooks that make your life better?

I have to say, I don’t cook from cookbooks. A goal of mine is to cook more from cookbooks, but I don’t cook from any cookbooks.

Except for my own. I’m too busy developing recipes. When I was vegan, I definitely used…I liked The Kind Diet by Alicia Silverstone. I used to cook from her book, but other than that, I don’t really.

What song or album just makes you want to cook?

Well, I’ll say this. My husband is very good with curating music and he curates a playlist on Spotify. My name’s Ali. He named it Ali’s Mix, and he updates my music all the time. So, that’s what I put on every single day when I cook. And it just makes me happy.

I am Gabriel Soh and I am so happy to have Brita Britnell of B. Britnell here with me today.

On Growing Up in Nashville:

I wasn’t born in Nashville, but we moved here when I was young, and I’ve lived here basically my whole life with the exception of college. I went to college in DC. So I’m very much a Nashville native. I absolutely love Nashville.

I will say I’m not into country music at all. I went through a year spurt in high school this one year where I really loved country music and since then I can’t stand listening to it if I’m being perfectly honest. But I love Music City. I love what it is to this city that I am in and just what it has become.

I feel like what it’s become is when people ask, “What do you do in Nashville?” part of me feels like I don’t have an answer, but it’s only because all I want to say is food and music and there’s 101 million different food and music things you can do every night in Nashville and I absolutely love that.

I love to make sure people know, that if they’ve never been to Nashville or maybe they’ve been, but they just walked down Broadway or went in all of the honky-tonk bars, is that there’s such an awesome music scene in Nashville outside of country music. We all appreciate the country music but there’s a really awesome rock-and-roll scene and a really awesome Indie scene and really anything that you can imagine. There’s just so much music in Nashville. It’s really great.

On the Role that Food Played in Her Home:

My father was born and raised in Italy in Sicily and moved here when he was in his twenties and my mom was born and raised in Georgia and so I got a very southern taste. My mom’s entire side of the family is fried chicken and buttermilk biscuits and sweet potatoes. And then my dad knows how to cook nothing besides traditional Italian food, honestly, and he loves to cook and he cooked all the time. Pretty much all he cooked was, I don’t want to necessarily say it was all spaghetti, but it was all Italian-inspired, for sure.

On the Food Culture in Nashville:

I had a big group of friends come and visit recently and I mentioned hot chicken to them and they didn’t know what I was talking about.

This is such a huge phenomenon in Nashville. I don’t think people understand until they get here. There’s a fried chicken place to every McDonald’s that we have. The myth behind the story is that this woman owned a restaurant and she found out that her husband was cheating on her and so she put a ton of paprika and cayenne and all this pepper in his chicken to punish him. He ended up loving it and started a restaurant and that restaurant is Prince’s. And so, since then it’s just hot chicken.

It’s essentially fried chicken that’s unbearably spicy. I can’t eat it. But there’s a hot chicken festival every year that the mayor comes to and it’s a really big deal here.

On Hot Chicken:

I always tell people you have to go to a hot chicken place. I think the absolute best place is Pepperfire. It’s a newer place but I just think that their recipe is the absolute best. I do a lot of Nashville food writing and do a lot of Nashville food photography. So whether or not I like it, I’m around hot chicken all the time. I always force myself to try it. That way I can at least say “They have good hot chicken. Or I don’t like theirs as much.” They’re all very spicy to me.

I actually have an article that I wrote for Thrillist that’s something like “X Number of Under the Radar Hot Chicken Dishes“. And there’s everything. Hot chicken tacos. Hot chicken taco salad. There’s everything. So I would definitely recommend the hot chicken.

Besides that, there is a place here in Nashville that I really like called Biscuit Love Brunch. I like to recommend that specifically to people just because I think it’s got a new-age new American feel while also having that southern-like “it’s all biscuits”, and they do have a hot chicken biscuit there.

On Her Blog:

I was just really bored at work, and during the summer it was super slow, and so I just felt like I needed a creative outlet. It was just this desire for a creative outlet and I did it because I wanted to write.

Honestly I didn’t know what it was going to be. I will say food had nothing to do with it. I never started my blog thinking that it would be a food blog.

I did think, “Oh, maybe once or twice a month I’ll share a recipe. That’ll be fun. I like to cook.” I never imagined that it would turn into a food blog. When I started doing those once or twice a month recipes I realized that was the part of it that I loved the most. It in a way felt like I had purpose as opposed to this “Let me come up with this witty article.”

On How She Learned to Cook:

I just figured it out. I didn’t cook a lot in college. I actually didn’t cook a lot growing up at all to be perfectly honest. It was one of those things that my mom jokes about now. She’s, “I always tried to get you in the kitchen and you wouldn’t even fry an egg.” But I’ve always loved to eat, I feel like, more than the average person. I’ve always been really into food but I just loved to have other people cook it for me.

At a certain point I just dove into it and I just wanted to know everything about it. I listened to lots of food podcasts and read everything I could. I would like to say I’m just self-taught. My husband is also a great cook. In everything that he does, he’s very technical.

The Pressure Cooker:

Which food shows or cooking shows do you watch?

I’m a huge fan of Chopped. I have it in my mind that they should do a Chopped blogger version. I really like Chopped. I like to watch Diners, Drive-Ins, and Dives. There’s always a lot of Nashville places on there so I think that that one’s fun.

My husband’s really loves watching Mind of a Chef. So we watch that a lot. Chopped and Mind of the Chef are two of my favorites.

What are some food blogs or food websites we have to know about?

I already mentioned Joy the Baker’s blog. I absolutely love it. I will be honest that for me food blogs are a lot about the photography. So my favorite food blogs are mostly my favorite food blogs because of the photography. There’s a food blog called Local Milk. She caught my eye because she’s local. She lives in Chattanooga and does a lot in Nashville so in the same State as me, and her photography is just the most beautiful photography to me. She also does have really great recipes on her blog. I’ve made quite a few. And I also really like My Name is Yeh. She does, I want to say mostly baking, but she definitely does other stuff. Those are for sure some of my favorites.

Who do you follow on Pinterest, Instagram, or Facebook or Snapchat that make you happy?

I’ve not gotten into Snapchat. I tried. Literally the only person I’ve ever snapchatted is my husband. I keep saying I’m going to get more into that. And Periscope. I haven’t even downloaded Periscope yet. But I’m really big on Instagram and again just going back to the whole food photography thing, I just love pictures.

I’m a very visual person and I just love the pictures. Local Milk has really beautiful pictures so I love looking at hers. Who else? I follow this one account called This Wild Idea and it’s a Tennessee account and it’s actually a dog, but it’s the same thing. The pictures are really beautifully done and I love that. So again, it’s a lot about the photography for me.

What is the most unusual or treasured item in your kitchen?

I will say I have this spinny thing that you put eggs on and it sits on the counter top. I could never use it because in America we refrigerate our eggs and you keep them in the carton. About six months ago, earlier this season, we got chickens which has been such a great fun experience and so now I’m able to keep the eggs out on the counter.

I love walking in my kitchen and seeing this. It’s this circular thing where the eggs go around it and when you take one egg off the rest spiral down and it’s a neat thing to me. I just love that I have my own chickens and that I have the eggs in the kitchen. I love it. It’s a really cool thing to me. I like to brag about my chickens.

Name one ingredient you used to dislike but now you love.

This is going back a little bit but when I was a child I absolutely hated peanut butter. I hated peanut butter. I don’t know why, and now I love it. I do a lot. I have a lot of peanut butter recipes on my blog. I have a peanut butter pie that is one of my most popular recipes and I have no idea why.

The smell of peanut butter made me sick. I couldn’t stand it but I absolutely love it.

I want to say a lot of spices. I never really cooked with spices until I got into my mid-twenties and now it’s like I’m obsessed with spices. I just love messing around with them.

What are a few cookbooks that make your life better?

I have both of Joy the Baker’s cookbooks and I absolutely love them. I think she’s working on a third one. I have a cookbook of hers that I want to say it’s called Homemade Decadence.

If you go back and look at my earlier posts from when I first started, I often referenced how much baking made me nervous. I loved to cook but baking was such a complicated thing for me, which kind of goes back to the macaroons, but that one was a great thing for me because I was able to take some of her recipes and I think she does a great job of spelling it out.

We also have the Joy of Cooking which is different from Julia Child’s book but just the Joy of Cooking and it has every recipe you can imagine. I want to say it’s at least 500 pages if not a lot more. I’m not really sure but it’s a ton and it has just everything you can imagine. It doesn’t have more popular or more modern stuff in it. I don’t think it has anything quinoa in there, but it’s got every kind of main dish every kind of bread that you can imagine and it’s an awesome go-to.

It’s been a fun way for me to experiment. My husband and I sometimes literally will be, “We want to cook a dessert. Let’s do something we’ve never done before, but that we should know how to do.” I made cheesecake for the first time recently and so it’s just been neat having that cookbook. I highly recommend that one. I think it’s a good bit of money. I think it’s $50 but I think it’s everything that you could ever want to cook from fried chicken to cheesecake to just every kind of bread. It’s awesome.

What song or album just makes you want to cook?

I just started this thing on my blog. Every time I post a recipe I’ve just been posting a YouTube video. And I told the story about how I love to listen to songs on repeat. So I often do. I just will put something on and whatever catches my attention, I’ll hit that repeat button and it will play the entire time that I’m cooking and photographing. I think it drives my husband crazy but it kind of keeps me going.

I’ve been really into lately Lucy Rose. She’s a British musician and I think I heard her in something on HBO, like she was in the end credits. I Googled the song and I’ve been really into her recently.
